I need some easy, gluten free breakfast ideas. I've been trying to limit my gluten intake and it's going really well....except for breakfast. I'm not one for cooking first thing in the morning so I'm having trouble thinking of easy breakfasts that won't get too monotonous.

Depends on the day, but some of my favorites: Curried frittata from VB (premade and warmed up) brown rice tortilla/daiya quesadillas with salsa (can be done in a frying pan or when i'm really in a hurry I just microwave some daiya in a tortilla) green smoothies Gluten free waffles or pancakes (premade and refrigerated/frozen) w/pb or almond butter Carrots and tomatoes w/ rice cakes and hummus Quinoa w/a little almond butter and rice milk stirred in then topped with cinnamon and bananas and a drizzle of agave. I'm also pretty likely to just eat whatever leftovers I have especially if it's pizza, pasta or nachos.

Smoothie most days (banana, OJ, frozen berries, tofu, flax). Sometimes I'll have GF cereal with rice milk. Sometimes GF toast. Sometimes frozen waffles.

Leftovers. I love savory dinner type food for breakfast and often mae enough on purpose to have breakfast the next day. Or, non cook oatmeal (make sure you have GF oats) quick cooking rolled oats, dried fruit, a litle sweetener and non dairy milk of choice, enough to make soft and creamy.

it depends on the day for me, too - but here are a few favorites: - smoothies (usually green, or a seasonal one. i'm digging pumpkin pie smoothies right now!). - 1/2 an avocado smashed on top of a slice 'o gluten-free bread. - slab 'o salt & peppered sauteed tofu on gluten-free bread topped with a slice of galaxy vegan rice cheeze. (i like to make my own tempeh bacon and keep the slices in the freezer - they're good on this breakfast sammie, too!) - collard wraps with hummus and various veggies. - polenta or grits with a generous slab of earth balance (just make sure they're gluten-free). - "over-night oats" made with gluten-free oats - i top my oats with maple syrup and raw walnuts. - soaked & dried buckwheat groat crunchies with almond milk, raw nuts, raisins & other dried fruits. - gluten-free cereal & almond milk. - coconut milk yogurt with buckwheat groats, nuts, and other yummies mixed in.

Thanks guys! I like more savoury things for breakfast (usually) too, so leftovers, hummus, sandwich wraps are some great places to start. I really need to get a blender so I can make smoothies. They always sound so good and that pumpkin pie one you mentioned is just calling to me!

I have steel cut oats almost every morning for breakfast. The thing that makes it easy is that you can boil the water and add the oats the night before, and just turn off the stove and put the lid on, and it cooks itself overnight! Also, if you add dried fruit they reconstitute and are delicious and plump!

usually i have a green smoothie (easiest: banana, OJ, a few leaves of chard)
but if i want something heartier i'll make rice porridge and eat that- you can use white or brown or whatever rice you have. about 1/4c rice for 2.5c water, cook the hell out of it. you can eat it salty (with scallions and shoyu and ginger, mmm) or sweet (brown sugar cinnamon) and it makes a good sub for something like cream of wheat.

Definitely steel cut oats...I stick them in my fuzzy logic rice cooker the night before and they're ready when I wake up. Obviously somebody with celiac would want to make sure to use certified gluten free oats, but I find Bob's Red Mill don't bother me. Keep in mind that oats can be made savory just like other grains!
Love to make some hash browns when I have the time--just grate up a couple of small potatoes, squeeze the water out with some paper towels and cook in a skillet 'till brown and then flip and cook the other side 'till brown. So yummy. I usually have a spoonful of peanut butter or some scrambled tofu with these.
Scrambled tofu. I never get sick of the VWAV recipe.
Some kind of home-made gluten free scone/muffin with nut butter.

I go through phases. Right now I'm in a GF oats phase. I eat them with homemade applesauce and raisins and almond milk.
In the past I've had: green smoothies buckwheaties (raw buckwheat dehydrated) raw granola with almond milk

But I actually do own a rice cooker and will give this a try :)

Most mornings, it's homemade gluten-free muesli with almond milk. Occasionally, I'll make a batch of gluten-free banana cornmeal muffins the night before and eat a couple of those for breakfast (and lunch, and snacks, and...).

I have been in a major corn thin with peanut butter and jam phase. I love those things! They satisfy that "I'm still sleepy but hungry and I want a carby thing with peanut butter" feeling I get most mornings.
Home-made granola with almond milk and pomegranate seeds has also been a hit.
