How well would this freeze? I'm thinking it would be good for lunches, but have never tried freezing cauliflower. Or curry.

Roasted cauliflower lasagna freezes well, for what that is worth. So do lentils.

I know curries freeze well, in general, because one of my old roommates used to bring back a cooler full of various Indian foodstuffs that his mother made him to freeze. He even froze her fresh garlic naan.

i freeze it and am happy with the post-freezer version - it seems the same to me. i just had some yesterday for lunch. i do freeze pretty much everything though! i don't think theres much that's vegan that doesn't freeze well. the only thing is that stir-fried veggies or others not already cooked pretty soft get mushier because their cell walls get broken. but i think the cauliflower holds up well, at least given that it gets pretty soft anyhow.

I have frozen it, too, and it works well because the cauliflower is already soft.

Cooked potatoes don't freeze well, and I don't like frozen cooked pasta, but most one-pot meals freeze well and become my lunch.

Everything will become mushier but considering it's more or less mush to start with it's not really a problem.
