Tonight I followed the recipe for the ranch dressing, but I used a really ripe avocado instead of the sour cream/mayo and threw it and all the other ingredients with a few splashes of rice milk into my food processor.... DELICIOUS! We gobbled it up and I think it would have been even better if it would have had time to flavor. I'll definitely try this again!

Made the Incrediburgers. Really liked them, but kind of undecided as to whether or not they're worth the time. I think they'd be more worth it if I made them ahead of time & grilled them a different day.

The cheesy sauce was awesome... my first noochy cheese sauce. I put it on top of the breakfast casserole from Vegan Brunch.

We made Seitan Lite a couple weeks ago for the Seitan and Herb Dumplings, and froze 6 of the cutlets and broth. For a quick dinner tonight, we reheated the cutlets and broth in the oven. I made a little olive oil roux and mixed in some warm broth to make a pasta sauce. I also thought it would be a really good gravy, but we're out of potatoes. Quick and delicious meal with a side of steamed veggies!

Same here, plus so many recipes seem to have small amounts of wine, sometimes both red and white in various recipe components.

I might try to do the gyros tomorrow if I have all the ingredients. I haven't tried seitan in a long time.

we had the gyros last night (with VCON lemony roasted potatoes, holy crepe!!). I really liked the tzatziki sauce a lot but the seitan itself seemed to me a bit too firm. It softened up during the sauteing, and maybe I could've made thinner slivers of it, but I think next time I may either divide the dough into 2 logs (like the amazing Viva Vegan white seitan, which this reminded me of) or steam it for less time.

The black bean soup is awesome, especially with some homemade tofu sour cream and an extra squirt of ketchup. Made it to have for lunches a couple of days, I'm gonna miss it when it's gone.

Yes! We just made this last night, but with kidney beans instead of TVP. So much flavor for something so simple!

I made the Brew Stew over the weekend and it was wonderful. I did use pre-made seitan and shallots (instead of onions). I also used a beer my visiting brother left in the fridge, as normally I don't have beer around...kinda hate beer for drinking!

AVK was my 2010 favorite cookbook, seriously. sold on fried avocado wedges, cinnacrunch muffins, the round the clock coffee cake kicks all other vegan coffee cake asparagus, and i really like the garlicky ribz--labor intensive but sooooooooooooo worth it.

the gazpacho is pretty rad as well. keep that in your cap when tomato harvest season is in full swing.

I've had gyros for dinner way too many times in the last week. I made a regular batch a week ago, then a double batch this Sunday. Completely addicted and I feel I'm becoming one with my Greek side.

I don't know if anyone will know the answer to this, but I was going to make the seitan recipe sometime over the weekend. I really don't want to buy soy flour just for this, so I wondered if chickpea flour would work OK. Anyone have an opinion?
