Friends, I want to try this thing. I have heard whispers about making cinnamon rolls, and rising them partially, then putting them in the fridge and then baking them in the morning. I am scared, because it's very important to me that my cinnamon rolls are a yummy success for my brunch party tomorrow. Do I do the 1st rise tonight, punch them down, form them into cinnamon rolls, and then put them in the fridge for a slow second rise in the fridge? Do they come to room temp before going in the oven, or do they go straight from fridge to oven? Please, teach me.

I've done it before exactly how you described with great results. First rise, punch down, form, fridge overnight, let them warm up a little on the counter while the oven preheats, bake, deliciousness!

AMEY! It's very important to me that your cinnamon rolls be awesome too, ha ha. VERY important.
I usually do the first rise on the counter like normal, and then the second rise with the buns laid out on a baking sheet in the fridge overnight. There's no real mystery or magic to it, you just get a nice long slow second rise instead of the faster one you'd usually have.

I've done that too. But I can't figure out where I read about it/what recipe it was. I thought it was the old Eat Air blog one, but it isn't listed there.
Please send rolls.

News Flash! I used the cinnamon roll recipe from VB. Got a most excellent rise on the first rise. Hoorah! Then I cut up 3 apples into 1/2" dice. Melted 1 Tbsp EB. Sauteed apples. Added a little cinnamon, the scraped out innards of about 3 inches of vanilla bean, and a splash of rum. Then proceeded with the rest of the recipe from VB, except with a little less EB to compensate. Now they are all rolled up and tucked away in the fridge for a long, good night's rest. Sweet dreams, Little Friends... I'll see you in the morning!
