I wish I could help you, but I'm in the same boat! or plane, as it were... I'm worried I am going to starve to death on my way to Sweden. And even if I could find gluten-free vegan food in airports, 2 one-hour layovers don't really give me enough time.
my plan so far is to pack a bunch of nutrition bars, but that's so boring...

I find hummus and veggie wraps hold up well on long travel days--I can't vouch for any good gluten-free tortillas etc., though. Do you think something like that would hold up well with your schedule?

Celery/Carrots and Peanut Butter? I don't know if peanut butter counts as a liquid, so it might be worth it to look into a 3oz container, if that's still the requirement. For protein that isn't nuts, I've been known to enjoy dried peas in the past ( http://www.nuttyguys.com/Fried-Green-Peas-P65C41.aspx). They don't sell them at my current grocery store so I haven't had them in years, but I used to get these all the time. I also enjoy dried papaya. It's about as chewy as jerky, but sweet as candy. Some folks aren't a fans of how tough it is, but I like it. I'm not GF, nor have I been on a flight of that length, but I hope that helps!

I've never had any extremely long flights, but Luna and Lara bars have always worked for me.

i have a flight coming up though not nearly as long. i plan to take a wrap or sandwich with almond butter & banana, some fruit (probably a couple apples), and a "trail mix" i make with gf cereal, nuts, dried fruit, chocolate chips or chunks, and sometimes gf pretzels or sticks&twigs. ill throw a few larabars in as well.

so I've had a couple ideas, first of all: Avocados! perfectly packable, super filling and easy to eat so long as you can get a knife & spoon on the plane. Also, I might try a recipe for tofu jerky and see how that goes! and I'm thinking about eating a huge meal before I leave home to stave off hunger for as long as possible. ;)
we can do this!!

Don't some flights prohibit nuts in case of allergies these days?

i think kale chips would be super. you can perhaps get some from your local health food store or make your own! flax or seed type crackers are nice, and you can bring a cucumber and some cherry tomatoes to cut up and put on top of the crackers. i wonder if they'd let you get away with nori wraps stuffed with nut pates and veggies? justin's makes peanut butter, hazelbut butter, and almond butter in little squeezy packs ( http://www.justinsnutbutter.com/) to squeeze on apples and bananas. granola is awesome, and xgfx jerky (like there are a few primal strips that are xgfx) might be awesome, too. i bet a quinoa salad would hold up nicely for a few hours - and maybe even some edamame "guacamole", too!

Put the PB on what ever you're going to eat it on, pack in ziplock bags. Peanutbutter on bread doesn't count as liquid. I usually take candy bars, cookies, sandwiches and nuts with me in my carry on luggage.

I make up my own yummy calorie-filled trail mix: walnuts, craisins & dark chocolate chips and bring some lara bars. Of course I've never been on that long a flight. I guess fruit would be good to bring too - apples and bananas? I like the quinoa salad suggestion above. Maybe a pasta salad with a vinaigrette type dressing and veggies in it to eat during the earlier part of the flight.
edit: Ooh and an avocado to add in to the pasta salad mid-flight. I hope I remember all these good ideas for my next flight!

I know it would absolutely suck to eat something gluteny by accident on a flight but on my last international flight the vegan meal was roast veggies on the way there and chickpea curry over rice on the way back, with fruit cups for dessert. It could be worth just ordering it and still bringing your back up foods.
