Based on Susan V's Asparagus Quiche on the fatfreevegan, I made this quiche.
I changed the vegetables to onion, peas, spinach, tomatoes, leeks and mushrooms.
As I didn't have rice in my pantry I switched it for bulgur and quiona.

And the best part, I got plenty of leftovers to bring to lunch for the next few days.

I made her little quiche-cuplets and they were SO GOOD. I totally need to try that. The tomatoes on top just look gorgeous and delicious!

I love the look of this quiche, I want to make a broccoli one when I get my hands on some tofu (I'm too poor right now to go up the shops, even to spend a couple of dollars on tofu).
