I am *so* sorry we couldn't make it. It was a very scary day in central MA. I'm glad you guys had a good time. Desdemona really outdid herself with her mac 'n' cheeze - we'll have to do another one sometime.

Thank you so much for having us, it was a lot of fun!! I am really excited to attempt that cashew goat cheese recipe because it was amaaaazing. Everything else was delicious, too, of course.

Here's the truffle recipe:

Pistachio-Dusted Chocolate-Raspberry Truffles

Recipe from Party Vegan

Makes about 3 dozen

These decadent bites can be made up to two weeks in advance and frozen until needed. Allow to thaw completely before serving.

8 ounces vegan semisweet chocolate
5 T. vegan margarine
1/3 c. seedless raspberry preserves (I could only find the preserves with seeds, it was fine)
1/3 c. finely chopped shelled unsalted pistachios
2 T. plain soymilk
1/2 c. finely ground unsalted pistachios, for coating

Melt the chocolate and margarine in a double broiler or microwave until smooth. Remove from heat. Stir in the preserves, chopped pistachios, and soy milk. Transfer to a medium bowl. Cover and refrigerate until firm, about 30 minutes.

Use a teaspoon to scoop about 3/4 teaspoon of the mixture and use your hands to shape it into a 3/4" ball. Repeat with the remaining mixture and roll the balls in the ground pistachios. Arrange them on a platter or place in small foil or paper candy cups and serve.


I made them a bit bigger than directed so there were closer to two dozen.

Thanks for having us over! I had a great time... it was nice to see some PPKers again and to meet new ones!

Umm, recipe... ouzo + a splash of water to make it cloudy. Chill the limoncello before serving. haha

Love your recipe. :) :) It was deeelicious.

As for mine, I was going to wait to link it on my blog, but knowing me, that'll take forever. So, instead, I'll post it here and re-post on my blog.

Strawberry Chocolate Chip Muffins
.25 cup Blackstrap Molasses
.3-.4 (I stopped measuring, sorry guys) cup Agave Nectar
.5 cup canola oil**
1 tablespoon ground flax seed in 1/4 cup water

1 Cup White Flour*
.75 Cup Whole Wheat Flour*
.5 Cup Buckwheat Flour*
1 teaspoon baking soda
pinch of salt-1/4 teaspoon
1 teaspoon vanilla

Almond Milk until it's muffin-y batter thickness. ~.6-.75 cup
1/2 cup chocolate chips
1/2-1 cup diced strawberries

Mix together wet ingredients (Can use sugar instead of molasses/agave mix, just a half cup, I imagine)

Add flours in 1/2 cup increments, with baking soda and salt and vanilla (though this can be added with wet, I just forgot until I added the flours)

Add Almond Milk until desired muffin-y thickness. Stir in Chocolate Chips. Fold in strawberries. Bake in muffin tins. Eat. Yum.

*Flours can be futzed with. So all white would be fine, a mix of whole wheat and white would be good. Use spelt instead of wheat or white, skip the buckwheat, I dunno. I just made do. These would've been Spelt-Whole wheat-white muffins if I'd had any around.

**I didn't try these with applesauce instead of most of the oil, but I'm probably going to at some point, because I'm all about using applesauce instead of oil... but I'm kinda crazy like that.

We had an awesome time! It will forever be remembered as the potluck with the amazing cheese. And everything else was delicious too! I'll post the kofta recipe later, it's from a youtube video, and I can only access the 'tube in app form right now, which I don't think has links.

We went on a trip to Montreal this weekend, and the cookies and muffins made awesome road snacks! Thanks for everyone who left us snacks.

ALSO, just in case you thought maybe our cats were good, this weekend Molly peed in the tote bag where I keep my other tote bags/purses. So gross.
