Zucchini was reduced at petes 5 for 1.99$!
Now I need a good way to use em all up, so what are your favourite ways to use up these magical vegetables?

Slice em, batter em in something (beer batter...) and make some sort of creamy dip. Serve with something lighter and healthier on the side and some fruit. So the tummy doesn't feel too oily. You could go Japanese with this idea too and do Tempura with the zucchini and other vegetables and serve some miso soup and rice and Japanese pickles with it.

muffins or banana bread- I don't really like zucchini so I like to hide it if I have to use some up.

Definitely muffins. I like to eat it raw in salad or dipped in hummus, I sometimes slice it up, spray it with a little oil, roast it it the oven for 10 min's each side & throw it in a bowl with rice, steamed broccoli & tofu. Oh and ratatouille.

I've veganized my mom's zucchini bread and it is so good. Let me know if you want the recipe.
but I'm sort of with dragonsister - bread and fry those babies. I'm planning on doing that tomorrow to serve with burgers (instead of fries).

zucchini bread sounds good.
I am hoping to make something with them I can bring with me to lunches for the week. Although eating a pound of tempura by myself in one sitting does sound awesome.

Caramelize them with an onion, and sprinkle with s&p when it's done cooking. Red pepper flakes are also nice if you want something a bit spicier.
Zucchini Lentil Stew : 2 cups lentils, rinsed 2 cups water (The recipe calls for 1 can broth + 1 can water, but I don't buy cans of broth) 2-3 fresh tomatoes, chopped 4-5 small-med zucchini, cubed 1/4 tsp dried thyme 2-4 cloves garlic, minced (I always put in 4, but it's completely up to your tastes) 1 1/2 t salt pinch crushed red pepper flakes
Combine all ingredients in a large stock pot, bring to boil, reduce heat, and simmer until tender(45 min-1hr)
Zucchini Corn Saute 1 large onion, chopped 2 cloves garlic, minced(or more depending on taste) 2 large zucchini, halved lengthwise and sliced 1 cup corn(fresh if possible) 1 cup pasta sauce 1/2 cup nutritional yeast 1/2 t dried basil 1/2 t dried oregano s&p, to taste
Dry saute the onion/garlic until translucent. Add zucchini and fry, stirring often, until half cooked. Add pasta sauce/corn, and cook until zucchini reaches desired tenderness. Stir in nooch, and spices. Good on its own, or over pasta/rice/barley. I made this at least once a week last summer and never tired of it.

I really like zucchini in pasta dishes (such as the roasted veg primavera in afr - just use all zukes instead of the yellow squash) and lentil soup. You could get more creative than that and make stuffed zucchini!

Put it in a pasta sauce, make a delicious soup or chilli, zucchini pancakes, put it in a smoothie. I love it so much, wish we had that deal here!

I like it steamed on its own, or cooked into stir fries. We had two MASSIVE zucchinis recently from my housemate's dad's garden that we had to get through (seriously, so big. housemate made two big trays of zucchini slice and I made two batches of muffins and that didn't get through ONE!) Anyway, I love the zucchini muffins out of eat, drink and be vegan for a sweet style, but I also made some awesome zucchini, sundried tomato and basil savoury muffins which were great for taking to school/work.

I grate it on a cheese grater and fry it in a pan after I squeeze some water out. Good with potatoes too!

Do you have AFR? There are a few recipes in there that use zucchini. Black bean and olive tacos are my favourite - I freeze the filling in lunch-sized servings and then bring a tortilla along to wrap it in.
ETA - heading to Pete's now, hope they have some zucchini left for the Morroccan chickpea stew I am going to make for the Scout pot luck today.

Use a julienne peeler to make noodles, then cover them with Ani Phyo's sundried tomato marinara. It's SO GOOD on a hot day!
