i had a very nice tofu scramble and taters with home-made salsa at wanda's cafe and bakery. the ambiance was cute and crunchy.

In Newport at Nye beach there is a great place called cafe mondo which has live music and lots of vegan options with a pretty awesome veggie burger. Also down by the docks/old town there is a Thai place that is very very good and will make (almost, obviously) vegan. And they have red rice! Bankok Thai - so good! have fun!

jdfunks - lee's is kind of icky (if it's the same place I am thinking of) there is another place nearby called the single pebble which I have always wanted to try. Not sure if they are still in business? A very long time ago I used to work at Salishan.

There's a new cafe in Lincoln City called The Loving Spoonful - I think it's mostly a breakfast place. Apparently they have vegan and gluten free options, not all of which are listed on their regular menu (my parents went and my mom asked and was surprised when they brought her a whole list). She said one of the items was some kind of soy chorizo. This is all second-hand info, so someone should report back if they go!
