I just bought this book today, and am so excited to start cooking up recipes from it. I know I'll probably make the autumn root salad with maple-fig dressing right away, but what else is really good?

Penne vodka (buy a mini of Ketel One for optimal results!) Edamame corn salad Biscotti! Leek and bean cassoulet Hummus ( very basic but my favorite, perfect version) Marinara

My faves are: chickpea noodle soup black bean burgers southwestern corn pudding chocolate bundt cake pumpkin cake banana bread cauliflower lentil curry (sorry if the names aren't spot on, I'm going from memory)

Some of my faves: Ceasar Salad Tamarind Lentils Chickpeas Romesco Smoky Grilled Tempeh Chickpea Noodle Soup (reminds me, I've got to make that again soon!) The Moussaka Tempeh Shepherdess Pie Pumpkin Saag Penne Vodka Pumpkin Baked Ziti Udon with Shiitake Mushrooms and Kale in Miso Broth Cashew Ricotta (works with everything)

I make the Spaghetti and Beanballs once a week. I also love the Portobello/Avocado Salad, Carmelized Onions and Lentils, and Chickpea Cutlets. The Pumpkin Penne is delicous, but a little too tedious and expensive to make all the time.

Latkes Guac Diner Home Fries - my hubby LOVED these Choc Chip Brownie Waffles - its our valentines day special! :-p Banana Nut Waffles Jicama Watercress Avocado salad - labor intensive so its not made often Snobby Joes - very good. I made these too much last year so I'm on hiatus from them Mexican Millet - my fav! Black Beans in Chipotle Adobo - make with the mexican millet Chickpea noodle soup - i used her recipe as a guideline, I add matzah balls and other stuff to mine Southwestern Corn Pudding - thanksgiving last year - everybody liked it Manzana Chili Verde Pineapple Cashew Quinoa stirfry - I make this ALOT its my top fav recipe sphaghetti squash mexicana plaintain and pinto stew Pasta della california - one of my fav favs Pasta e fagioli curried udon noodle stirfry Skillet cornbread lower fat banana bread - my goto recipe for when banans are going bad in my house... chocolate chip bread pudding

Mac Daddy is our most used recipe ever Sage Pumpkin Pasta perfect for this time of year corn chowder Mousaka the Piccata the smoky tempeh and greens, especially with mac daddy

- lower fat banana bread pg 228, i can't even count how many times i've made it. i usually make muffins with this recipe. - baked BBQ tofu -brooklyn deli macaroni salad - mac daddy - tofu florentine - almond-quinoa muffins (omgomg) - black bean burgers - spinach linguine with basil-cilantro pesto
honestly, these are the only recipes i've tried from this book, but i was amazed by all of them. the only one i've made but didn't like was the quinoa-black bean-mango salad. i think it's because i put too much quinoa in,though, or something...it was my own error that ruined the recipe.
have fun! this thread make me look through my v-con again and MAN there are so many delicious-sounding recipes in here! i've gotta make a point of using more of them.

Everything I have tried has been good, some stupendous, and best of all everything turns out. I only have a few cookbooks that I can trust like that.
I concur with all the suggestions but wanted to add:
Rosemary Foccaccia - easiest recipe ever, I make the dough in my breadmaker and also use it without rosemary for pizza crust Saffron garlic rice - my 11-y.o. says "I don't like rice, but I like that rice." Especially with Chickpeas Romesco Lemony roasted potatoes Banana date scones

Thanks for all the suggestions! I've been looking up a bunch of recipes from the ones you've all listed, and they all sound so good. It's going to be so hard deciding what to make first!

So one of the bright spots of Livi's hospital stay was the soldier/nurse who secretly confessed to having been a vegan for 3 years and confessed to her love of Veganomicon, VCIYCJ and VCTOTW. She was appropriately impressed when I told her I knew Isa and Terry.
