I made these GF, not originally vegan brownies and thought they were really good. Dense, not cakey, but not too fudgey (I don't like them to be squidgey).http://foodandspice.blogspot.dk/2009/05 ... dried.html
Subbed coconut oil for the butter, and replaced 2 eggs with flax and the third with pureed yam. Also no cranberries, because that might be good, but it seemed weird to me.
I'd love to try the teff brownies, but haven't been able to find teff flour here.
There's also a vegan GF brownie recipe from Emeril, of all people.http://justasmidgen.com/2012/08/01/emer ... -brownies/
It does have bananas in it, which at first made me suspicious. It does not taste like banana, or smell like them, but is just a little bit fruity. Still good enough to go under some raspberry sorbet, but not as good as the first ones I posted.
