This is my first attempt at The Ultimate Uncheese Cookbook's Colby Cheez. It will not be my last. For breakfast: cheez with toast and grapes:  For dinner: half grilled cheez sandwich (didn't melt but was warm and creamy), more cheez shredded on a salad and tomato-basil soup.

That looks tasty. I have a difficult time with commercial fake cheezes. But you have me wanting to get the uncheese cookbook. What, pray, does this Colby Cheez taste like, what goes into it? Does it use agar agar?

I haven't had real cheese in several years, so I couldn't tell you that it tastes just like it, but it's definitely reminiscent of it. And it's so creamy. I will most likely be making it again and again just like I do the gee whiz spread from uncheese. Personally I think this particular recipe was a little strong to taste like Colby. I think I'll lessen the onion powder and possibly the dry mustard next time.

it looks great. i've made this before and it was really full flavored, although i added smoked paprika and did something else different, and it never got solid so it could be shredded like yours. Yours looked great!

This looks so good, and I am really jealous, because most of the hard cheezes call for nuts, and I am allergic to most, but that looks so authentic and great.

That looks so yum! I've had that book on my Kaboodle list for ages, with no luck. Now I'm even more likely to just cave and buy it for myself.
