Has anyone made an angel food cake without cake flour and had it turn out? I cannot find cake flour here and the plain flour is making the cake too dense.

a vegan angel food cake? if you're making it vegan, the eggs would be a much bigger problem than the flour.

Are you sure you're not making a sponge cake? If you only have plain flour, take away a tablespoon of flour per cup, and add an equal amount of cornstarch or custard powder in its place.

I agree i've tried making vegan angel food cake with egg replacer and it was a total flop, the cake was gummy and never really cooked all the way thru, i have seen vegan sponge cakes tho

Haha, I totally opened this thread thinking "oh no, not another thread asking about how to make angel food cake without eggs". I wasn't expecting what I got.

Someday some (totally not) evil genius will figure out vegan angel food cake. I just hope it happens within my lifetime.

The closest I've seen so far is a recipe by Bryanna Grogan. I haven't tried it, but I remember the photo looked great.

500 Vegan Recipes has a recipe for angel food cupcakes. It calls for all purpose flour and egg replacer.

You can make ener-G, and even if you don't want to, perhaps someone else who can't get it does (although i can tell you, it doesn't whip for crepe). Here's the recipe: 1c potato starch .75c tapioca flour (starch) 2t baking powder mix up. .5T + 2T = replacement for one egg (make sure to mix and let stand before using in a recipe)

If a recipe calls for simply adding commercial egg replacer to a recipe, I usually just leave it out because I find it seldom makes a difference in the finished product.

12 minutes of whipping in the kitchenaid and it's still as wet as it was. unless the stuff in the box has some kind of gum, i don't see how it's possible.

Bittersweet's new book uses ener-g to make meringue and macarons. I haven't bought ener-g in 8 years or so, but the pictures of her stuff look really good, so I feel like I might have to try it out.

Maybe it's the amount ... too much possibly? Bryanna's angel food recipe uses whipped Ener-G as well, but less. In the photos she posted in her newsletters, it seemed to whip just fine. Are you using Ener-G? She says it's the only brand that will whip up sufficiently.

the ingredients in Ener G are: Ingredients: Potato starch, tapioca flour, leavening (calcium lactate [non-dairy], calcium carbonate, citric acid), cellulose gum, carbohydrate gum my recipe for enerG (since we don't get it here) leaves out the gums.
so i guess they do have some kinds of gum, although to be honest i think maybe i can do without it. carb gum? mmmmmmm

I recently bought a pack of zanathan gum for the ice cream recipes in Vegan Diner and just the tiniest amount made the mixture go from liquidy to thick and creamy.

I use either tapioca starch or flax with sugar in the same way you would use eggs to make a genoise, and whisk the cake batter like hell to make it really airy. there are other things i did too and ended up with an incredibly light cake, but i've lost the recipe temporarily.
