I made this with the tofu leftover from the Tofu Benny. It was so good, and I was thrilled to not have to throw out leftover tofu after finding it hiding in the fridge weeks later!

i haven't made this yet, but i have used the cashew ricotta (the recipes are pretty similar) as a cream cheese sub and loved it.
