this weeks dinners are planned as: tuesday: pumpkin soup and green bean salad wednesday : broccoli and cauliflower soup with beans and cabbage salad thursday: leftovers friday: burritos with lots of beans and corn saturday: probably a chickpea flour frittata sunday: pasta with mushrooms and sugar snap peas

Tonight I tried my hand at the VegNews Mac n Cheese recipe...highly recommended! I just had to add a little nooch even though the recipe is proudly nooch-free because I'm so vegan. We cooked whole wheat macaroni and I mixed in a little cooked kale because I was feeling guilty. Served it with a salad, too. LEFTOVERS!

I'm having a vegan dessert buffet for dinner! Two of us in my book club are vegan and the other girls are trying their hands at vegan baking for our birthdays. I can't wait to see what they came up with!
I also just ate a few tater tots for general sustenance.

TJ's Vegan Pad Thai with Tofu. Added a little Sriracha, and it was pretty tasty. And a jam thumbprint cookie for dessert.

I just made the Vcon Mac Daddy for the first time. Very noochy, very delicious. I predict I will be eating way, way too much of this tonight...
I shall have to try the VegNews mac 'n' cheese mentioned above soon so I can compare.
This is my first time making vegan mac 'n' cheese! I feel like I am leveling up.

The cheezy sauce is all ingredients I already had in my pantry, which is great. Give it a try!

Roasted butternut squash, a roasted yellow bell pepper, and something involving tvp, because I have a ton of it. I need to consult some cookbooks when I get home.

Instead of what I was planning on having, I had something better: sauerkraut pierogis with homemade tofu sour cream. It was beautiful.
