Because it's not worth preparing anything fancy just to eat alone, hunched over the counter, watching the Netflix, and quietly sobbing. Here's tonight's offering chez hoveringdog.

Peanut Rice
Two cups brown rice
A couple large heaping spoonfuls of peanut butter
A modest spoonful of thai green curry paste
A splash of peanut or sesame oil
A couple splashes soy sauce
A squirt or two of rooster sauce
A dash of lime juice if you're feeling fancy

Cook your rice. Mix everything but the rice in a bowl until it attains a uniform consistency. Stir it into the rice. Eat.

This is mine:

Potato-Kale bowl

A couple of large potatoes, cubed
A large handful of kale, shredded
Nooch
Salt
Olive oil
Optional - chickpeas or tempeh (cubed), broccoli (chopped small)

Roast the potatoes with oil and salt. Add cubed tempeh to roasting potatoes in the last 10 mins if using. Mix it all together in a large bowl with liberal amounts of nooch. Add extra salt and oil to taste. Shovel into mouth with chopsticks (because all good meals involve chopsticks? Well, most of mine do, anyway).

Honestly I end up eating beans on toast far too often. I also like to make pasta with esme's sauce and peas or green lentil and broccoli soup on nights I can't really be bothered to cook. Or Patak curry paste (I'm partial to Balti but Tikka will do) + crushed tomatoes + red lentils + kale if in season broccoli if not + oat cream/soy yoghurt if I'm feeling fancy/have it at home. Serve over rice. I'm so sad they ruined the formerly vegan naan (they changed the recipe to include yoghurt).

I just googled beans on toast and I'm kind of scared. I eat way too many beans to limit a serving to the size of a piece of bread.

I end up cooking separate meals fairly frequently. Lately, I'll admit I've been making lots of smoothies. Yesterday, I made a faux tuna fish salad with the tempeh recipe from vegan substitutions. I love that recipe lots. I cut up some Swiss chard and topped it with the tempeh salad.

Today, I really want scrambled soyrizo and tofu but I have no soyrizo. I may just need to wing it with the tofu.

when i first became single, i cooked all sorts of fancy meals and had dinner guests all of the time. now i often just eat a piece of bread with jam and a few carrots on the side.
when i DO cook, it's usually either hummus and frozen falafels, pasta with tomato sauce, mushroom sauce or esme's special sauce, rice with stir fry (frozen wok mix flicks the weasel!) and some peanutbutter sauce, polenta with white wine braised veggies and truffle oil (when i want to get fancy!) or baked beans straight out of the can. or dhal.

or oatmeal. i eat a lot of oatmeal.

Last night I ate brown rice shell pasta with nooch and Smart dogs cut up into it. A typical weeknight meal for me is leftover brown rice stirred into frozen veg, soy sauce and chickpeas.

I tend to make big meals on the weekend and then just eat leftovers during the week, here is a standard thing I make:

Cheap-o Rice Soup
Cook up an onion in some oil with garlic, add your stock, add any vegetables you like, add a cup of rice, add some kind of protein, bring to boil then simmer until rice is cooked. Make a big enough pot and you have dinner/lunches for the week. Replacing the rice with noodles will also make you a decent 'chicken' noodle soup.

No no no, it goes like this:

Select box of cereal.
Sit on couch with selected cereal.
Intermittently plunge hand into box of cereal and shove in mouth.
Should you dislike your cereal crunchy, angle head so tears drip into hand pre mouth-feeding. Admittedly, this does have the tendency to make your soggy cereal meal a wee bit salty, but them's the breaks.

A heaping spoonful of cashew butter, maybe a bit more (that shiitake's expensive)
A crap-ton of Olive Oil
Two or three handfuls of nooch
Sprinkle of garlic powder
Dash of onion powder
Generous pinch of salt
Dash or twelve of hot sauce (optional)

Mix together, stir into prepared macaroni.

Me too. Tonight I'm making vegan lasagne in my brownie edges pan and maybe some date-tahini thumbprint cookies. I'm bummed because I forgot a baguette and salad fixins' when I was out yesterday so I can't make garlic bread and salad to go with the lasagna. But I'll have leftovers all week!

Well, I'm with hdog on this. I've only been divorced a few weeks and I just can't get motivated to cook for myself. I mean, I am eating so I am cooking, but really simple. I think the basic tofu scramble I made yesterday was the most elaborate meal I've had in weeks. No side dishes, no desserts. Stuff in a bowl.

can of black beans +cumin, maple syrup and whatever other spices are near me. add tons of hot sauce, my new love is Secret Aardvark. eat plain, with chips, or over 5 minute brown rice.

pasta + oil + CRP (crushed red pepp) + salt + peas + not dogs

When I'm not motivated I chop a few tomatoes, a bunch of basil, and a few cloves of garlic, saute everything in some olive oil, then toss in some pasta...

Simple and delicious... its done in the time it takes to boil pasta
