I'll eat a meal consisting of 1 can of beans and 4 bits of toast at least twice a week. probably more. Beans, tabasco, and some herbs to take it up a notch. It's good for when I can't be forked making dinner AND when I want a fancy breakfast. I recently switched to the no-brand beans from the cheap brand beans because they were half the price. I do have to use a can opener rather than pull a tab, but I'm willing to sacrifice. I'm also onto rice, and stuff (tofu or vegetables) cooked in soy,sweet chilli and sesame oil. But that does cost like, 4 times as much.

Two or three times a month when I'm either super low on produce or without motivation to cook, I'll have pasta something or other. Usually one of these things that take maybe ten minutes to make:
kittees pasta from pakupaku if I have a fresh tomato (rotini, fresh chopped tomato, nooch, olive oil, garlic powder, olives, etc.)
the lemon garlic pasta from ED&BV.
Peanut butter pasta recipe from Garden of Vegan (peanut butter, chopped roasted peanuts, cooked linguine, spices mixed into the peanut butter like garlic, a bit of Braggs and chopped broccoli) - I think it's called Hayley & Ian's peanut butter pasta
Or Olive chickpea toss (chickpeas, olives, and I can't remember what else) over rice which is also in Garden of Vegan.
I'd do beans and toast more but I rarely have bread around unless I've been planning on making sandwiches.

Well, admittedly I have been eating out a LOT. There's a new vegan cafe in town and I have lunch there 4 or 5 times a week. So homemade stuff-in-a-bowl is a step up from dining out every day

My biggest reason for cooking 'actual' meals is to have leftovers to stop the women I work with getting all maternal on me when they see what I'm eating for lunch.

It's hard to talk myself out of going too, since I have much more disposable income now that I'm not supporting the ex. Plus they make what I make at home (like Chicago style hot dogs and buffalo ranch wraps and BLTs) and they have soft serve! But really, it's not healthy. Tonight it was mashed potato with fried onion, mushrooms, a tomato, some chickpeas, dried herbs and seasoning and a handful of pre-washed salad leaves from a bag.

I don't know what I am going to do when I actually have to prepare meals for my baby. I always make one dish meals. Tonight it was quinoa with spinach, garlic, mushrooms, pine nuts and parsley.

Maybe what I should have said is that I've got all the loneliness and despair with the added bonus of having food thrown at me. Maybe I should actually contribute something to this thread rather than just complaining. Umm, I like peanut sauce with noodles and frozen veggies.

Most of my meals are a version of these: Soup: I fry a couple cloves of garlic in some oil, add water, salt, liquid smoke, Hungarian paprika, cilantro, nooch, and either lentils or split peas. Sometimes I throw in whatever veggies are around. Beans: Lots of beans and hot peppers fried in oil, typically with peas. Pizza: Spinach, black beans, and tomatoes sprinkled with noochy goodness on a quick, yeastless crust. Bread or biscuits: I bake biscuits if I'm lazy, bread if I'm not.

Pasta + garlic + capers + olive oil + lots of salt and pepper.
Beans + taco seasoning. In a burrito wrapper if I'm feeling fancy.
Sweet potato + red curry paste.
I like cooking bigger, somewhat fancier meals though, because leftovers keep me from eating the crepe at my place of work. Even tho I have a boyfriend around, he rarely eats what I cook and never eats leftovers, so in the kitchen, I am a bachelorette.

Also, a quick miso soup with tofu or edamame beans for protein, whatever veg on hand (preferably a leafy green) and some dried shittake mushrooms I keep on hand for such quickie solo meal occasions.

I do try to cook real meals for myself, but I hate eating leftovers for three days (if it's not an easy recipe to cut in half), and it's so much easier to slack on cooking when it's just me.
My ideal easy meals are healthy-ish:
- Modified tomato-peanut-kale pasta from LDV, which is just whole wheat spaghetti and kale mixed with tomato sauce, pb, chili-garlic sauce, and nooch.
- Quinoa cooked with veg broth, topped with chopped baby bok choy and white beans mixed with pesto (if I have some in the freezer). That's from a Jae Steele book.
- The hottie black-eyed peas and greens from AFR, with a sweet potato or polenta.
But sometimes it winds up being a quesadaiya.

I usually whip up a big bowl of pasta with tomato sauce (made from scratch) and lots of kale. Or if I'm feeling particularly lazy, I'll just make rice noodles.

If you ever get a chance, try a sweet potato burrito. Cook the sweet potato in the microwave, and heat up some pintos (or refried) in the microwave as well. Wrap it all up with your favorite veggies and send me a thank you note.
