Well, I didn't do it, my boyfriend did. He cut the sunflowers down before the seeds had a chance to turn black and white. So now they're just white. Is there anything I can do to get the seeds to ripen if they've already been cut?

This isn't advice, more like a guess, but as a florist I know that once a flower has been cut there are only a couple ways it can behave. If you leave it out of water or harvest the seeds I can't see how it'd do what you want it too, it would just wilt and shrivel up. I think the only thing you could do is put it in water like a cut flower and keep the water really clean and fresh, and trim a little off the bottom of the stem, do these things probably once a day. This way the flower will either mature, how you want, or at least do nothing, but at least it will stay the same, as opposed to die. You could try putting it somewhere the flower will get sun but the water will stay shaded and cool. It'd probably get moldy if you have it outside.

it's probably better this way anyway. i once grew sunflowers and before the seeds got to a suitable size, the heads were attacked by some sort of animal. at least this way they're inside.

Well it'll be better if they ripen. They may not be fooled so easily by a bowl of water. But here's hoping!

you'll probably be more successful with the ones on the left than the one on the right. the one on the right looks a little too immature with the flower bits still intact and relatively green.

Are they as soft as they look? I never knew sunflowers could be harvested like this.
