I try to cook a few times a week so I can have the leftovers for lunch and dinner. If I can't be arsed I have pasta with Toby. (He gets his plain, plain, plain and I add veggies, nooch, beans, whatever is in the fridge.) Once every other week, I go out with a pal to try a new restaurant. Even when I was married, I made food just for me because the man would not eat what I cooked. Tonight it was mac and trees with DETOS tempeh wingz.

I cook lots, but it's mostly the same routine every week. I make pasta w marinara (canned, I know, but it's cheap and easy) and then dole it out in containers so I can have meals for a few days. I just tried Tofurky Italian sausages in the sauce last night, and while the sausage tasted alright when I ate it as a grilled sausage on bread w whole grain mustard the other day, after simmering in the sauce it took on a weird texture, somewhat reminiscent of a bread pudding/cornbread dressing, which my omni neighbor, J, confirmed. I was a bit thrown off by it, actually.
I digress. I make tofu tikka masala, the red lentil + caramelized onion + pita crisps from V'con, I make the Chickpea Quinoa Pilaf from AFR A LOT and I make shizz like stir fry or lentil soup a lot, too. I'm actually making a great big vat of root veggie stew right now in Ye Olde Crockpot.

Today, biscuits and sausage. Recipe:
Make 9 biscuits Cut tube of sausage into 9 pieces, pan fry Put sausage in biscuit Cover in sriacha and ketchup

Today's lunch: cookies and chocolate almond breeze Yesterday's lunch: 5 bananas.
See a good thing about being single is I would be too ashamed to eat these things if there was somebody around to witness it.

I've been eating my weight in almond granola w dried pineapple and/or papaya and fresh blueberries w soy yogurt. I cannot get enough of it.

Also, it's good for using up the sage in my herb garden. And it's not too much trouble to make. I made it at like 9:00 p.m. on a weeknight and was eating by 10:00 p.m. so that was good...

Today:
1 tortilla handful of daiya pepperjack 1 chopped tomato (from my plant! the only one!) 2 chopped sausages left over from yesterday salsa
Put the last 4 into the first and microwave it. Yum.
Dessert is a real dish. I am making a blackberry/strawberry crisp using guidance from Vegan Baking

A can of peas mixed with pasta and nooch is always good. Add some soy sauce and hot sauce to make it better. If no pasta, I will also eat the peas on toast for a change from the beans, which is pretty tasty as well.

Sometimes if I have been too lazy/broke to do proper shopping I have uncooked tofu and pesto sandwiches/wraps. It doesn't really taste that good. Otherwise most of the time it is fried whatever vegetables I have + rice noodles + coconut milk. Kung pao and pb banana above me sounds soooo good.

I am clearing out my woefully almost-empty-already fridge. So I am making spanikopita. It is so odd that I had everything for that, but this is progress! I'll have a real main dish and a dessert.

oh man, I am the worst about food during the semester.
a favorite lazy dinner of mine is: Spinach (frozen, defrosted) mixed with a half can of chickpeas, salt, pepper, garlic and cholula hot sauce. optional side=toast. I'll eat that for a couple days, then switch too something like pasta with red sauce and mushrooms. Then I'll forget to go grocery shopping for a couple weeks and eat cream of wheat and/or cereal every day. I sometimes just eat chickpeas out of a can and call it a day.
lunches are pretty much all pb+j all the time.
I can't get it up to cook for myself when all I'm going to be doing is watching netflix/sleeping and then going back in to the studio.

I found Nacho Mom's queso at the weird local grocery store with the random vegan foodstuffs (apparently there's a market for these things, although the existence of other vegans in the area is still unconfirmed). I had two jars of the stuff this week with a family size bag of tortilla chips and a can of re-fried beans.

You guys have no idea. Sometimes I go all out and I make really fancy meals, but when I get lazy, it's baaaaad. On the better end (and this still sounds terrible) I'll go to the bodega and get one of those Annie Chun's noodle bowls, and on the bad side ... well, it's a variety. Sometimes I like to call it a smorgasborg but really it's just whatever I can find that's edible, usually eaten separately. Sometimes it's chips, sometimes it's bread, sometimes it's whatever random vegetable is in my fridge, sometimes it's raw pasta. Today for example, I had two cups of tea, a piece of bread (the lame end piece) and then I finally got up to buy a few things and I ate a bunch of newman o's and some spring rolls from a box. But just a couple days ago I was making homemade pizza with tomato sauce and pesto from scratch!

Brown rice + can of black beans + tofu spread (tofu+nooch+blend the hell out of that shiitake) + hot sauce Eat it on a tortilla if you're feeling very fancy.
This is Saturn Cafes "poor student" meal for $5, but I just eat it at home all the time.

Tots with cheesy sauce sounds delicious! Tonight I had salad, grilled seitan cutlet with fingerling potatoes, and white bean & sage gravy. A pressure cooker makes it easier for me to prepare quick meals. The beans were cooked earlier this week, and the potatoes only took 5 minutes to steam in the pressure cooker. Breakfast was a coffee chip muffin and coffee with soymilk, and for lunch I ate saltines and the Gee Whiz spread from the Uncheese cookbook. I also had watermelon for a snack.

My favorite is chickpeas with caramelized onions. Slice onion, cook the crepe out of it, dump in chickpeas, add salt and pepper, eat.
I also eat a lot of steamed vegetables (usually broccoli, carrots, and/or spinach) with tahini sauce (tahini + soy sauce + garlic powder + tiny bit of agave) and maybe rice if I can be bothered to cook any.
I really do try to cook real meals for myself, though. I usually make a lot of something and eat it all week, so a little bit of effort goes a long way.
