I've been super sick for the past few days, so when I can actually be forced out of my bed by hunger I've been eating canned lentil soup and drinking lots of OJ. I just ate some almond granola with blueberries and soy milk. I am out of yogurt. :( Should probably try to actually cook something tomorrow.

Yesterday for lunch I made a batch of black bean brownie batter - black beans, oatmeal, banana, coffee, coconut milk, etc, and then ate it out of the food processor with a popsicle stick. It was awesome.

I like to cook for myself too, but usually I do enough over the weekend so I all I have to do is heat stuff when I come in from work. But couple quick favorites: *the chickpea pizza (flatbread) from Ultimate Uncheez with hummus and raw veg. *Sunshine burger with baked sweet potato fries and a spinach salad *a mound of brown rice (use leftover or frozen), steamed asparagus around that, all topped w/cashews cooked in a little olive oil, capitol hill seasoning from savory spice shop (basically dried shallots, parsley, salt, pepper, maybe something else - but I don't have to mix it!). Lightly squeeze lemon juice on top and serve. *caesar salad wrap

When I eat alone, it's mostly: * Popcorn with nooch and Vulcan's Fire Salt * Noodles with marinara sauce and more nooch * Buffalo and/or 'shake 'n' bake' tofu with steamed broccoli (if I'm feeling super-ambitious) * Plain white rice * Bread and EB * Just, like, pounds of Skittles, Sour Patch Kids, etc.
But more often than not: * Nothing

Forgot: Brown rice tortilla, cover half with chopped spinach, pile on some mozz daiya. Microwave 1 min or until daiya melts. Fold tortilla over, cut in wedges, eat with TJ's salsa verde.

so, I am running very low on sleep, but I find myself without a class to go to until noon (due to a cancelled class) so I am keeping myself awake by eating spoonfuls of frosting.

Last night's damn-it's-too-hot-to-cook meal
1 box Shells and Chreese Non-dairy smilk of your choice, unsweetened preferred. EB nooch smallish head of broccoli (substitute frozen peas if the thought of picking up a knife exhausts you) Rooster sauce
Chop broccoli into small pieces that will cook fast. Cook pasta and when it's almost done fling in the broccoli. When the pasta and broccoli is cooked, drain it. Dump it back in the pan, pour in some smilk, sprinkle the powdery stuff in, put it on the still warm burner and stir like crazy. Add more smilk if needed so it's creamy and not pasty. Add a blob of EB, a handful of nooch, salt and pepper. Top with rooster sauce and eat straight from pan.

I eat salads almost every single day. Last night: spring mix with red onion, tomato, avocado, and hot corn and black beans with a roasted poblano and tomato dressing I made up on the fly. Tofurkey wraps are a big one for me, too: small whole wheat tortilla with tahini and lemon, tofurkey, Italian olives, tomato, avocado, artichoke hearts and spinach. Yum yum. Pasta: whole wheat penne or angel hair with either home-made cashew pesto and sun dried tomatoes or a home-made red sauce with olives, sundried tomatoes, lots of herbs, bell pepper, onion, garlic, crushed tomatoes and a good sprinkle of nooch. Soups or curries of any kind. Stir fry with noodles. I love eatinggggg

today i had 2 leftover pancakes for breakfast. 3 day old curry for lunch. dinner was a pear, 3 leftover potatoes and two carrots. this was a healthy day.

My usual post-work dinner is spiralized zucchini with some kind of hummus/dip/salad dressing, with miscellaneous vegetables and/or grains thrown in, plus a shitload of bread and/or wasa crackers with EB. (The latter is the only-in-private-because-it-gets-exhorbitant-eating-habit part.)

i almost always have steamed (frozen) broccoli and cauliflower, chickpeas, and spinach. then some sort of carb, like an english muffin or more likely, pretzels. peanut butter on the spoon and a glass of soymilk for dessert. this constitutes almost all of my at-home lunches. at least i cook the chickpeas from dried in the crock pot?
