My always go-to meal is quinoa with pb, nooch, and cork sauce. Sometimes I add lime juice and I often add chickpeas and broccoli (usually roasted - I like downtime). I just mix it all up in a bowl.

Depression Era Dinner
Pasta that was on sale
Water
Salt
Canned Veggies or frozen if your fancy (peas/carrots)
salt
pepper
oil/earth balance
nooch
paprika

Boil water, add pasta, when pasta is almost cooked toss in the canned veggies, heat through and strain.
Melt EB in pan with nooch and spices, toss pasta/veggies back in and shake until combined.
Eat out of the pot with a fork, watch netflix re-runs in your undies.

I just tried Tofurky slices for the first time, and I think I may never cook again. I'll go broke trying to keep them in stock, but damn...REAL ACTUAL DELI SLICED STUFF AND CHEEZE SANDWICHES. Heaven, I tell you, HEAVEN.

I'm having roasted chickpeas (the tamari ones from ED&BV- so good!) and kale chips. Not totally pathetic, but they're basically snacks. Also it's almost 10pm; this would never fly if I had to cook for someone else!

So, my boyfriend does most of the cooking, but I try to help out sometimes. My contributions would probably be considered bachelorette meals, though, so I thought I'd post.

Miso soup with tofu and noodles and crushed red pepper. So easy and so yummy. Plus you get to slurp soup. Miso is a lifesaver.

My all-time favorite: Fry up garlic and crushed red pepper (and onions if I'm ambitious) in tons of olive oil, throw in veggies if you have them, add cooked pasta and some kind of vinegar. My boyfriend hates this.

Steamed sweet potatoes and black bean quesadillas.

Cereal. Lots and lots of cereal.

Yeah, I buy the low sodium canned beans. I usually do cook my own now that I know how. But in a pinch, if I have to leave for class at 10 and won't be back until 5 or later, I just use the canned stuff.

And I should add that I usually just cook/heat this on the stove, but I knew when I got back from school and had this mountain of reading to do, I would be super hungry and wouldn't want to wait for it to heat up. All five minutes that it takes, you know.

Tonight, though, I'm actually cooking *gasp* and I'm making my beloved Chickpea Quinoa Pilaf from AFR. That cookbook has given me such joy...and the recipes are so easy. Very bachelor(ette) friendly! I made the Mango BBQ Beans for my friend's birthday...his whole family loved them, and they professed to not really be into bbq beans. I subbed black beans for the kidney beans, though, and used brown sugar because I didn't have agave.

My bachelor dinner last night was home-made corn tortillas, refried black beans, sauteed peppers and zucchini, roasted salsa roja, and Spanish rice.

My bachelor dinner the night before was Cajun red beans with rice and black bean corn chowder.

All made in quantities that would serve 6-10 people, because I don't know how to make less than that. A couple of my roommates eventually helped out a bit with the taco stuff, but there were still tons of leftovers and my freezer's getting full.

My bachelor dinner the night before that was celery, peanut butter, salt, and beer.
