I was recently sent some vegan kimchi to try from Granny Choe's Kimchi Co.

I'd never had kimchi before, so I looked for recipes on their site and found one for salsa. This stuff was awesome, and really easy to make!

I still have to figure out what to do with the mild white kimchi - do you guys have any suggestions?

Make Kim Chi fried rice: rice, onions, tofu and add the Kim Chi at the end. Yum

YUMMMM. i have been seriously lacking in kimchi - somehow i haven't been able to hunt down any vegan versions lately! : ( those look delicious. i like it in fried rice or in tofu/jackfruit and kimchi mandu (dumplings).
