I think last night was an all-time low. I had:
- A large bowl of melted chocolate soy icecream (melted because our freezer is semi-functional at best).
- A piece of toast with peanut butter and some Indonesian fried rice flavour paste.

Then I curled up and watched old episodes of Degrassi High on youtube (Newsflash! Erica really was pregnant! She had all the symptoms! What will she do now?)

My meals have been incredibly classy lately.

Tonight I had a Bocca vegan burger, on a ww silver dollar roll, nooch cheeze, jalapenos, and ketchup. Also homemade french fries, tossed with garlic and onion powder, covered with nooch cheeze sauce and some rooster sauce added for some kick.

The past few nights I have only eaten an enchilada casserole, which is basically tortillas, refried beans,corn,nooch cheeze sauce, jalapeno, salsa, etc. Where are the fresh veggies?!

Nooch rice:

1) Take come cooked brown rice from the freezer (I commend myself for remembering to do this most of the time).
2) Fry it with oil, salt and a lot of nooch.
3) Eat.

Yesterday I spent two hours cooking a chili that turned out awful, so instead, dinner was fusili pasta with margarine, "parmesan", green peas from the freezer and lentil soup from the freezer, all mixed in a bowl and covered in ketchup. I thought of this thread while eating it.

I made a ghetto version of the Chickpea-Quinoa pilaf...it wasn't as good as it could have been, but I was super hungry and had nothing else to eat besides bread and crackers.

Last night I ate canned lentil soup. Woo, such a gourmand.

1. Make pasta.
2. Melt together peanut butter, soy sauce, and maybe throw in some ginger, pepper flakes, and sesame seeds. Stir in the pasta.
3. If really ambitious, add frozed veggies. I haven't been ambitious lately, though.

Leftover brown rice, microwaved, mixed with a big dollop of hummus. Eaten at 11am when I realised that I was meeting people for lunch but had no money to actually buy lunch.

Last night was soba noodles with peanut butter, soy sauce and sriracha because I thought I was spending the evening alone. Later, because some people actually like to eat vegetable matter with their dinners, I picked up a veggie-ful curry and a salad one the way to biker boy's house and shared that with him. The boy may be an omni, but it's possible that he eats more vegetables than I do!

noochy rice with earth balance & broccoli is one of my favorite meals. I am super lazy and use the boil-in-bag brown rice. It comes out perfect in only 10 minutes!

Two popsicles. Grape and orange. And a bowl of bowtie pasta with EB and nooch, per the recommendations in this thread. It was simple yet filling. And I forking love bowtie pasta.

Frozen okra, can of diced tomatoes, and cajun seasoning. Eat with instant brown rice, couscous, or crackers.

Also, what's this beans on toast thing? Is it an outside-the-US thing, and that's why I've never heard of it? Enlighten me!

Haha! I never knew it was before, but apparently so. Well, I would guess perhaps the UK rather than the whole rest of the world implied by 'outside-the-US'. Baked beans on toast, the quintessential student meal. You don't get baked beans in a can in the US? Or do you all just balk at eating them on toast? It's great!

Oh, we have baked beans for sure! Even the Brit kind. But no one really puts them on toast here. They sit on the side of a plate, alongside the burger and chips/crisps.

Unless you go out of your way to buy fancy imported baked beans, the beans we have here are way too sweet. They're not the same. And brown sauce is harder to find. It's a problem.
