I want mini pies, can I do them in a muffin tin or will they stick/burn?

That looks awesome, thanks! My main concern is that I often get overdone crusts from my pies, cause the pumpkin takes so long to set. i was worried this would be even worse in a metal tin. I am thinking now that I might stick the whole thing into a bain marie to see if that prevents burning...

Choosing Raw posted some pumpkin pudding recipes over the weekend, and my first thought was mini pumpkin pudding pies. With press-in almond crust perhaps?

I have such pie jealousy. It's hard (and expensive) to get canned pumpkin here, and not much easier to get edible pumpkins and make your own, outside of the week before Hallowe'en.

Aw, it's Thanksgiving for me, so I have pumpkin in abundance. I ended up doing my pumpkin pie in a regular crust, and mini fruit pies. I think this pumpkin pie recipe would be great for mini pies too, cause it's quite firm, I wrote it here in case anyone is feeling inspired.
