My dad used to love Indian food when he lived in London, but he always says what he gets in restaurants here just isn't the same: not spicy enough, not flavorful enough, whatever.

There is a small chance I can convince him to let me make an Indian meal for Thanksgiving instead of ...

He doesn't seem to remember what he used to eat, but he needs it as hot as possible. He was famous in some of those London restaurants for repeatedly sending food back for not being hot enough. He won't eat any sort of meat analog or tofu, tempeh etc, so I was thinking of sticking to cauliflower/potatoes, etc.

Any suggestions? I can buy whatever whole spices are needed. The main thing is keep it as authentic as possible (or at least London authentic rather than Americanized?). He said he preferred Madras style food. (I'm a spice wimp and don't particularly like some of the spices in curry powder, so I'm not knowledgable about this at all--educate me wise PPK!)

I really like Manjula's Kitchen for simple, easy-to-follow recipes. Some of the stuff isn't vegan, but she has all the vegan dishes clearly tagged and labeled.

could you just make a channa adraki or masala with rice and some veggies? i don't have any recipes, but i always get this when i go out.

spicy food is good. i'll bet your dad has really nice, clean arteries and liver.
