My mom's friend made this tonight and my mom said it was amazing, and was wondering if I could veganize it. It looks a bit tricky since there's so much dairy and stuff in it, anyone have any suggestions?

I would find a tried and tested vegan chocolate bundt cake recipe and a vegan chocolate mousse recipe and assemble.

Most mousse recipes seem to use soft silken tofu, so 1/2 cup of tofu would replace 2 of the eggs. For cake, I usually use 1/4 cup of vanilla soy yogurt for egg, but I've never tried replacing more than 2 eggs using that method. Typically if a recipe needs more than 2 eggs, I either keep looking for a different recipe, or I use multiple egg replacers.

I think that there is a chocolate mousse recipe in Joy of Vegan Baking, unless I am confusing with VWaV.

Tofutti sour cream and cream cheese give generally good results as subs in baking, although for the sour cream I usually just use either soft tofu with a bit of lemon juice added or soy yogurt.

Thanks for the tips! It was the seven eggs in the recipe that really made me wonder.

Well, it sounds like half the eggs are for making the cake mix and the other half are for the mousse, so replacing them isn't as insurmountable as it sounds. I'm definitely not clever enough to try to replace 7 eggs in any one dish.
