I have the same problem! I love to bake, but it's just two of us here and I'm trying to watch my weight for once. I might just have to start wandering around the office, distributing plates of cake.

What did you do for the frosting? carrot cake is my favorite kind of cake and I have yet to find a satisfactory replacement recipe-wise for the frosting.

it may not work for something like this (wet icing and all), but I usually mail most of what I bake to family and friends.

I used the recipe from here

But I added 1 tsp of baking powder and because i didn't have enough maple syrup for the frosting, I substituted it with 2 cups of powdered sugar.

When I had lots of baking from the recipe development for Q&E Vegan Bake Sale I used to take containers to school when I picked up the kids and got all the parents to help with eating what I had made. I know some of the testers took stuff into work too. You have to share the love, and then everyone 1, thinks you are AWESOME, and 2, thinks vegan baking is AWESOME too.
