I recently used some as the bit beneath my pizzas? I also make polenta with mine.

I love cornmeal and sub it in for some flour (a little less than half the total amount) in most non-sugary baked goods. Biscuits and pizza crusts work really well. Cornmeal breading on fried things is also excellent.

If you have V'Con, the cornmeal-crusted baked tofu and cornmeal pudding are both pretty darn tasty.

Lemony blueberry corn muffins! There's a recipe for them in VWAV I think.
