I've had a bottle of white truffle oil sitting in my cupboard forever, and I was wondering if there are any recipes that call for it that are particularly awesome?
I originally bought it because I thought I'd be super fancy and make truffle fries, but I haven't tried them out yet because I always oven-cook my fries, and all the recipes I've seen require deep-frying everything twice.

i found some a few months ago, and it was amazing on polenta and grits. Just a drop or two.
Similarly on fresh tomato/zucchini salad. Oh baby.

we eat it on anything that involves potatoes, pasta or polenta. it's AMAZING. like, really truly amazing. or on cauliflower soup! god, truffle oil is great.

We use it on our baked French fries and it's out of this world good. If you are a garlic lover, add some to the mix before baking. Heaven.

I have a similar problem - an almost full bottle that is nearing its expiry..
It's great in mashed potatoes, but have very little idea what else to do with it.

Put it on popcorn (or pop popcorn in it?) for gourmet popcorn. Even better, enjoy said popcorn with a glass of champagne.

I use it on risottos, pasta and mashed potatoes mostly. It's good on a white pizza with mushrooms and thyme.
I did a blog post on truffle oil once and got several posts saying it isn't vegan. Not to be that person, but just saying.

I bought some recently on sale at Whole Foods and have been making truffle popcorn too! Just truffle oil, sea salt and maybe some garlic powder. Best snack ever.

Thanks Liz. Oh, that thread, what a way to wake up!!!
I don't know. I suppose even if it is just a teeny bit of real truffle (mine has some crumbs in it), if it's pig harvested, it's not what I want to eat (but pigs bad/dogs good? hmmm). On the other hand how to know whether it was farmed or wild? I would be curious to know if all the wild stuff is sold fresh and the farmed stuff used for oil and other preparations. I would imagine at $7US for my bottle, it was the oldest, cheapest, crummiest truffle in the world.

I saw someone make mac and cheese and drizzle some on top. I dont know how that would taste on a vegan noochy sauce though.

Thanks for all the ideas! I think I need to make all of these things, but especially the mac & cheese, since omg, that sounds so good. And the popcorn/champagne idea. And the fries, of course. This didn't even occur to me, but I'm pretty sure the relatively cheap bottle I've got has been made using farmed truffles.
