I love using my slow cooker this time of year. I have a vegetarian slow cooker recipe book, but I am sick of beans and soup. Any great ideas?

I just scored a slow cooker/crockpot at target last week for $10 so i would love some links to some good recipies as well!
Also, i am usually home from work pretty late. does anyone know of recipes that can cook for 10 hours? most are 6-8 hours. will i totally overcook my food?

I like this site: http://healthyslowcooking.com/tag/beyond-easy/A lot of her slow cooker recipes are for small slow cookers, which is great, because that is what I have. She explains about cooking times...some things can cook forever as long as you don't run out of liquid, other things...yes, you do have to watch the time. And she's pretty responsive to comments on her blog, so I'd ask her about the 10 hour cooking time if there's a particular recipe you fancy.

Someone said they made seitan in theirs. I'm gonna have to try that.
I primarily do beans/soups, but i've seen cakes, lasagna, casseroles and more!

Seitan! There's a recipe in Vegan on the Cheap for a seitan pot roast w/ potatoes and carrots that's really good. The recipe is on Robin Robertson's blog, too but you really should buy the book. Lots of slow cooker recipes. There's a chili with cornbread dumplings and a tabbouleh stuffed pepper recipe in there, too. Both for slow cookers.

The Vegan Slow Cooker book is amazing. It goes well beyond just beans and soup (hint: pizza!)

I loooooove baking potatoes in my slow cooker! Its perfect for days when I know I'll have leftovers for dinner and will need something to go with them. Just rub a few potatoes with oil, wrap in foil, and put them in your slow cooker... I can let the big ones cook on low for 8-10 hours and they come out super creamy and delicious!

Baked potatoes in the slow cooker! Who knew?? It has to taste so much better than microwaved baked potatoes. Do you lay them in the crock vertically or horizontally? Or maybe it doesn't matter?

I can't wait to try this. Thank you. I don't think it really matters, but I stack mine mostly horizontally. You can fill the slow cooker as full as you want as long as the lid still fits tightly. Just make sure your taters are completely dry before you wrap in foil (or before you oil them and wrap in foil) or else the inside of the foil gets a bit odd and rusty looking. The potato insides turn a bit more of a creamy yellowish color than they do in the oven, but they are seriously tasty and sooo easy! Good luck!

I never use foil. I just spray a little cooking oil to coat the slow cooker and put my washed potatoes right in. I do poke holes in them with forks first, but that's it. You can do the same with sweet potatoes and winter squash!

Yes this thread is hella old. Guess what? I STILL have not used my slow-cooker. It's sitting in a closet. But I will be home all weekend, and want to use it! Does anyone have any links to some favorite recipes? I was thinking maybe these Jackfruit Carnitas but I can probably just make them on the stovetop just as easily on a weeknight. I was thinking more along the lines of a good stew or chilli.

i'm a big fan of the 3 spicy sisters stew in vegan on the cheap.
and as for seitan, i totally use my oval cooker for bryanna's turkey each year. i don't change a thing. (it's essentially the same thing as the baking it for hours on end method, but uses a fraction of the energy. comes out perfectly.)
also, the seitan stroganoff in vegan slow cooker is really tasty.

I dont have either of those books...and when I do a search I get 3905704 results, all of which are different. I guess 3 sisters stew is a thing? there sure are a lot of recipes. Today I learned....

Robin Robertson's new Fresh from the Vegan Slow Cooker book is a LOT more than just soup and beans. :) I've made several recipes from it so far and all have been great.
I didn't have the best luck with the seitan from Vegan on the Cheap. It had an odd texture when it was done. I'm sure it was something I did wrong.

I got a crock pot for Christmas!
I'm wondering which cookbook to start with. However, I am also gluten free, which limits me from using seitan, or making any of these fun recipes like pizza and any kind of bread like thing (without much trial and error anyway). Can anyone comment on a vegan slow cooker book that is mostly veg/beans based? Tofu or some tempeh is fine once in a while, of course, I just don't want it to be too much fake meat based. So far I was looking at "Fresh from the Vegan Slow Cooker" (Robin Robertson) and also "Vegan Slow Cooker" (Kathy Hester). Thanks for your input! :)

Robin's cookbook is very veg/bean focused on the entrees. In the event that she uses a vegan meat, she offers alternatives, and to the best of my memory, Kathy's book does too. I would say you're safe with either. Robin's book is longer, but Kathy's book offers step by step suggestions for doing prep the night before so you can throw it together easily in the morning before you leave for work, school, etc. I have both and use both.

Most of the cookbooks I've looked at have recipes geared towards bigger ones, and I suck at math.
