Here's how I made my chilaquiles casserole: layer tortilla chips (or baked tortillas, either are ok), black beans, black olives, and red sauce. Bake for 30 min at 350. I sprinkled some daiya on top for looks.
Here's the sauce:
4 onions and 4 green bell peppers, chopped and sautéed
5 cloves of garlic, minced
1 heaping tsp cumin
1/2 tsp chili powder
1/2 tsp cayenne
2 large cans of chopped tomatoes, with juice
Salt, to taste
Simmer 30 min until slightly thickened

The cashew cheese was from Viva Vegan!

I am planning to make mini nogcakes with bourbon-nog frosting! Holidaying like whoa, all up in this.

I was planning on going, though I'm not sure what I'll bring yet. I work with the guy who brought the truffles, and I'll see if I can get him to come again with a Christmas variation.

I'm leaving for Canada the very next day so I will be at home doing last minute packing. Sad I will be missing the xmas variation of those truffles though!

We pretty much demanded that he make a Candy Cane Jo Jo version. I'm going out of town the next day, but am going to try very hard to make it! No idea what I'll bring yet.

Think I'm gonna go with a cucumber salad of some kind. Sounds like we'll actually have a good amount of healthiesque salads!

Chris is coming, and he's bringing peppermint oreo truffles. It will be amazing!

I am so excited for tonight! I have to make my cupcakes when I get home, but that's okay! I'm planning on getting the heck outta dodge and away from school right away at the end of the day. Being selfish for today.
