i'm finding that sorting GF stuff out is like veganizing an omni recipe--it's a great challenge and the pay off has (so far) been delicious. i like viva vegan quite a bit--seitan can always be subbed with beans or lentils, dontcha think?

or soy curls, which is my go to--works great in terry's seitan tamales...

I'm really new to gluten-free, and I had NO IDEA soy curls were gluten free--thanks for mentioning this!

Where do you live? You can order them online from Food Fight or direct from the manufacturer Butler Foods.

I live near Asheville, N.C. I looked on Amazon but they are out. I will take a look for your two suggestions. Thanks!

I placed an order for The Allergen-Free Baker's Handbook and Cookies for Everyone because Kittee told me to and I am so excited! Baking used to be so relaxing for me and since going gluten-free it's become frustrating and stressful, I hope these will help.

I think you're gonna be really stoked! They sorta gave me back my baking edge!

i had the Flying Apron GF one, but i sold it. i really didn't like it. i was hoping to get ideas of different flour combos, but they relied heavily on rice flour, and ridiculous amounts of coconut oil and maple syrup. way to expensive for such disappointing results.

I have it from the library. Just so you know, most of the recipes requiring flour call for a prepared mix.
