 Post subject: Carrot/Tomato/Onion Pulp - what can I do with this?

My friend taught me how to make an Indian tomato soup today in which you boil tomatoes, carrots, and onions together, drain the water, and puree the vegetables. Then you press the liquid out of the pureed vegetables, and that liquid is the soup. You're left with the pulp from the pureed vegetables that is similar in texture to canned pumpkin.

What can I do with this stuff? She said she usually just throws it away, but feels guilty about the wastefulness. I'm thinking maybe I could use it in some sort of savory bread, or in lasagna, something like that? Any ideas?

I'd make muffins with it - just substitute it for pumpkin and adjust the spices.

I was definitely thinking of using the VWAV pumpkin muffin recipe ratios and making it savory somehow. I'm new enough to vegan baking that it scares me to experiment! but this stuff would just go to waste normally so it doesn't really matter if I mess it up, I guess.

I don't know what it's called! But it was easy and good:

You put 4 peeled, roughly chopped carrots, 5 (big) chopped tomatoes, and a quartered onion in a stock pot, cover it with water, and then boil until the veggies are soft. Then drain the broth off into a separate container, puree the veggies, put the puree in a wire strainer and push all the liquid out. That liquid becomes the soup. Then melt a couple tablespoons of earth balance in a small skillet, add about a tablespoon of cumin seeds until they're toasty and popping, then mix that into the soup. Add back some broth to thin to desired consistency and some salt, pepper, and sugar to taste. Garnish with cilantro. Viola!

I ended up with not only the soup, but a huge amount of tomato-y vegetable broth to freeze plus the pulpy puree.

How about raw crackers or pizza base, a nut/bean loaves, veggie burgers, savory cakes, fritters, quiche filling, adding it to pasta sauce?

Add chopped celery, chilli and tinned tomatoes, simmer it up and you have yummy sauce for pasta.

I suspect all the flavor and nutrients have been boiled out of that stuff. I'd just throw it on my compost pile. But the recipe you describe sounds delicious!

Update! I made the sweet potato biscuits in AFR but used half canned pumpkin (because I had some to use up) and half of this stuff. It was perfect!
