 Post subject: best substitute for heavy cream in this recipe?

This frozen chocolate/peanut butter/banana loaf/terrine/whatever looks like a simple but sophisticated-seeming dessert to bring to my in-laws' gluten-free Christmas dinner this weekend. But what would be the best substitute for the heavy cream? Note that it is used for whipping, but that you also freeze it.

What do you recommend?

i dunno. i would think since they want it whipped to stiff peaks i'd go with making Isa's Rad Whip. at first i thought full fat coconut milk (skimmed & whipped) might work, but perhaps Rad Whip would be best.

I would use a tofu chocolate mousse recipe and add pb/bananas.

Coconut was my initial thought too, but I think for the sake of fluffiness, I'm going to try the rad whip. Plus I know I can freeze that well (something I was concerned about if I wanted to try soyatoo or something). Wish me luck!
