I didn't see a Vegan Brunch thread.
I made the VB tofu scramble yesterday with my daughter as part of a small family brunch. It was fantastic. Everyone agreed it was the best thing on the table. I added spinach and mushrooms. I had been a tofu scramble failure until yesterday. Tofu scrambles were just one of those things that I was not good at. Now I'll be making them every weekend!!
We also made the Chelsea Waffles. Excellent! I need a new waffle iron though because no matter how much I oiled it, they were sticking.

Isa knows tofu scramble! So good!
I'm also a big fan of the basic scone recipe and its variations. The herbed drop biscuits are lovely. The pancakes always taste great, but I can never get them to come out as fluffy as I'd like, but I'm terrible at all pancakes. Toasted Coconut Mango muffins are really awesome too.
I'm dying to try the tofu bennie, because I know it'll be amazing. And all the waffle recipes look delicious, but I don't have a waffle iron. I've thought about trying them as pancakes, but I am terrible at pancakes.

When I was in Munich, Anek had made the cherry sage sausages (transformed into cranberry sage sausages). They're great!

just made the Individual Hash Browns yesterday for the millionth time...the recipe makes a TON, but they make outstanding leftovers. And the Tofu Benny has been our go-to brunch dish for any "special" occasion since we got the book, it is ridiculously good! And honestly, not as much work as it seems, although I do insist on making the English muffins for it always.

I make the sausage with collards all time time. The polenta rancehros is one of my favorite easy things to make in the world because it is so good and you get tons of leftovers. The cornbread biscuits are fantastic. The quiche is so good. And the swiss chard frittata! Maybe this is my favorite cookbook. I love everything I can think of that is in it. And it is really nice and pretty with good pictures.

I love the tofu scramble from Vegan Brunch! Amazing. The Coffee Chip muffins are super good, as are the Bakery Style Berry muffins. My husband ate an entire batch of berry muffins within 24 hours this weekend.

I make the roasted potatoes with variations all the time, it's a great basic recipe. The courico tacos with grilled pineapple salsa was probably my favorite thing I've made from VB. And the tempeh sausage pastry puffs are really easy to make while also being really impressive.

wrong thread, woops - love this book, however, and I really need to buy a new pan so I can make omelette's - which, however - can also be made on parchment paper in the oven, somewhat well.

scones, chocolate chip style. so good. i lent vegan brunch to my mom and she makes these at LEAST once a week. so good!
also roasted potatoes.
swiss chard frittata! i add caramelized onions to this. it's amazing hot or cold.

This is definitely one of my top cookbooks. I love making the quiches and frittatas. The muffins are amazing. The pastry squares with tempeh sausage and navy bean gravy for breakfast was the hit of last year's holiday celebrations. The scones freeze well and I was able to blow surprise guests away when I presented them along with tea, seemingly out of nowhere, when they dropped in unannounced.
I can't wait to make the coffee cake, bagels, and English muffins.

I bought this book specifically for the omelet recipes. They're the one thing I missed from my pregan days.
They're perfect, flawless, stunning, etc. I make them every weekend and I don't know how I ever did without black salt.

I made the broccoli quiche for the first time last weekend and it was the best quiche I've ever had, even when I was omni. The cornbread waffles and lemon poppy seed muffins are also stand-outs. The coffee cake and cinnamon rolls are exactly what I remember them tasting like. The only thing I've ever made that I didn't like was the lemon cashew crepes, but I think I might have made them too sweet, so it's my fault.

Gosh I love this one. I use it almost every week and I LOVE the vidalia onion pie--it is to die for! Also awesome are the sausage/chorizo recipes. Well and everything else I've made from the book :)

oh man, when we first got this book my omni husband made the quiche so often we probably ate quiche at least once a day for nearly a month. so good.

I know it sounds silly, but the roasted potato recipe makes them turn out perfectly. And the white bean, leek, mushroom pie is fantastic and fancy tasting. Was thinking of bringing it to T-day for my entree since it's so good at room temp.

I love both the bakery style berry muffins and the toasted coconut muffins! The pancakes are good too (if you don't already have VWAV) and the tofu scramble is so yummy! I definitely need to cook more from this book!

I made the Tomato Rosemary Scones yesterday and the texture wasn't what I was expecting. The dough was super sticky and I had a really hard time rolling it out. I ended up adding so much flour to the counter just to make it manageable. The actual flavor was great, but the texture is more of bread than scones. I know I'll definitely try them again, I'm just trying to narrow down what to adjust for next time.
I'm assuming I did some overmixing somewhere. I did mix the wet ingredients quite a bit in order to incorporate the oil with the tomato sauce. Or perhaps there was too much baking powder. I've looked around the interwebs, and I've seen some reviews that are scone-like, and some that had similar results to me.
Any thoughts?

The Chelsea waffles. Oh my word. They are so incredibly good and perfect.
Recently made the gingerbread waffles for the first time; they, too, were amazing.
Love the individual hash browns. I like to make a batch and stick them in the freezer, then pop them in the toaster oven as needed.
It's a pretty amazing book.
