My best friend and I decided to have "tea time" for Gossip Girl this week. We made 5 different kinds of tea sandwiches, and I made a Moroccan Mint Chocolate Tea Latte!  I made Cucumber Mint, and Apple, Pear, and Basil Tea Sandwiches.  She made Hummus and Asian Pear, Tomato and "Cheese," and Cucumber and Watercress Tea Sandwiches. I'm not going to lie, I had originally wanted to pair the apples and pears with hummus and vegan swiss, but ran out of time. I really like basil butter, so it was a quick sub. The inside of the sandwiches were good, but the bread I got absolutely sucked. I had wanted a crusty dark rye or marble rye or pumpernickel, but the only dark bread Whole Foods had was this weird, way too soft bread with whole rye kernels that gave it a weird texture. I ended up using the basil butter as a dip for the apple and pear slices:). Oh, and as always the recipes are on my blog!:)

The dark bread looks tasty... sorry it didn't have the texture you were looking for. Cute sandwiches!

Looks great! What separates a sammich from a tea sammich? And doesn't Whole Foods totally suck for not having rye? If I want a reuben I have to make two stops: WF for Tempeh and the regular grocery store for rye.

Those look wonderful! I love a good tea sandwich, but it never occurred to me to make veg*n versions.

One recipe I read for tea sandwhiches asked to roll out the bread flat with a rolling pin. Adds a nice texture to the sandwhich.
I love your combinations!

And I commute via bike, so that can get annoying when it's freezing or raining! Or just in general if your bag is full:)

I love your combinations! That's such a good idea! I flattened some of mine with my hand when I got bored of thinly slicing... haha
