I checked this out and was immediately turned off by all the use of substitutions. I have access to a good chunk of them but it's way out of my budget and time (I'd have to drive around picking everything up). I'm glad I didn't actually buy it.

Same here.

The one recipe I wrote down before returning it is the Peanut Butter Dream Pie. That sounds pretty scrummy.

When we have perfectly acceptable, un-scary ingredients, vegan alternatives for common items, replacement type cookbooks may be useful. Most of our options work in a pinch, but not on their own. It seems compensating is the best way to get around it!

I don't mean to be awful, but I don't think we have reached the holy grail of commercial vegan cheese that can match up to the properties/taste/etc of dairy cheese. Let alone a lot of other products.

So out of curiosity, I was reading the amazon review for the book and someone mentioned that all the fat jokes/making fun of fat people in the book was a turn off. Is that really a thing?

There is a joke that she makes more than once on her blog that is fat-shaming. I do agree that you should read her blog before you buy her book. As with some other vegan bloggers who published cookbooks, she has a ...particular style that could be off-putting to some people.
