Lunch today was really good and fast... baked potato stuffed with nooch, lentils, zucchini, spinach, onions, garlic and carrots and topped with homemade salsa.

That's quite pretty and healthy-looking! Most baked potatoes I see are so heart attack inducing!

So yum! My new baked tater stuffing has been chili. It's like a chili cheese fry minus the "fry" and the "cheese".

Yum!... although for some reason when you said tater and chili and cheese I started dreaming about Tater tots covered in chili and cheese sauce. aaaaarrrrgggghhh!! Fortunately, I have spent my budget this week, so Tots are off limits to me. .... at least this week.
