Brunch, however I think I use the (not vegan) A little taste of India most often.

My boyfriend casually dismisses all of my cookery books in favour of the Asian Vegan Kitchen by Hema Parekh, which kicks arse.
For sweet things, the back of the Veganomicon gets the most action. Nothing I've made from the savoury recipes has ever really given me a nomgasm (sorry Isa - I guess we just have different tastes).
It's a toss-up between How It All Vegan or Leah Leneman's Easy Vegan Cooking.

Probably Vegan Brunch. I love me some muffins! I don't limit breakfast or brunch foods to morning, they are good anytime. Waffles with seitan sausages or tempeh bacon make a fine dinner.

Whenever i get a new cookbook i use it a ton at the beginning and then taper off but i find myself going back to Vcon over and over again.

La Dolce Vegan! I always check this book first when I want to cook something. However, I purchased Everyday Happy Herbivore a couple of weeks ago and I've made a lot of recipes from that.

AFR Vcon VWAV...in that order Now I'm trying to branch out and use 500 vegan recipes and 1000 vegan recipes more because there really are some great dishes in them, I think I've just been intimidated by there being so many!

Most recently, AFR most followed by a tie between Vcon and VWAV. Probably. I've been using Vcon a little more lately after sort of taking a break from it in favor of AFR.

AFR for sure. and not because it is calorie consious (and i am on a diet blah) but i have an Omni partner and he loves these recipes. and they are quick.
Then Vcon, then Vwav, then Viva Vegan and The Indian Vegan Cookbook. - nobody here seems to talk about this last one, but it is pretty awesome. Also utilize the fatfreevegan.com and sparkpeople recipes a lot.
I really REALLY need to cook out of these more: The uncheese cookbook the asian vegan cookbook vegan soul kitchen.
I have barely made anything out of the first two, but i know they are good.
I need to start a cookbook utilization thread, so people can tell me what to cook out of them. I am terrible, i know...meh.

VCON and VPITS. AFR is working its way into that rotation, too. I love all my cookbooks but those definitely get the most use.

AFR. Mainly because although I like cooking I am very lazy, and I find all the AFR recipes easy to follow and fairly quick (and yummy of course).

Vegan Brunch. We make pancakes or waffles a few times a week, some sort of biscuit at least once a week, tofu scramble at least once a week and the savory stuff gets made for dinner quite a bit. Then AFR and Vcon, though I've loaned BOTH out and they have been gone for almost a month :( VWAV is also well loved though it has taken a back seat to the others.

I also tend to cook out of something a lot when it's new, the only exceptions I can think of are "Carribbean Vegan" and "Veganize This", mainly because the complexity of the recipes is a bit daunting. I always do come back to V-con, though- I've cooked about 115-120 of those recipes so far, hoping to cook my way through eventually (when I get over my fear of baking). Lately I have been coking mainly out of AFR, though, and expect that that will continue.
