So it's the first vegan restaurant in a hospital maybe ever, but definitely in North America. Has anyone checked it out or do you know someone who has? Any feedback would be so appreciated!

That is great! I don't know about that place, but I have a relative in Florida who prefers the Adventist hospital in part because of the food being so good. This relative is nothing close to veg.

Yeah, it's awesome! Bo Rinaldi of BloLo collaborated with them, so the menu isn't boring and it's cheap! Like, raw entrees for five bucks cheap.

I've had their food, but not at the hospital (which, I suppose, is a good thing?). A blogger recently did an internship stint there and blogged about it, though! http://mypeanutbutterstachy.blogspot.co ... istro.html

I'm excited to see this post about the LivingWell Bistro. I work for Adventist Medical Center and can vouch for the food, it's awesome (I know I may be a little biased).

As another poster said it was started with Bo Rinaldi so you know it's good. The food is all vegan and Bo has placed a huge emphasis on using local organic sources.

If you have any specific questions I'll do what I can to help answer them. If you do stop by for a visit I'd love to know what you think. You can email me at leeat@ah.org.

Full disclosure, I do work in the marketing department and have been helping promote the Bistro since it opened. That said, I choose to eat at the LivingWell Bistro regularly because the food is so good.

I work at Adventist as well (I'm an RN there)...but I'm a regular poster on here and longtime lurker...
I've eaten at this cafe a few times and been really happy with it, although some of my (omni) co-workers have complained about blandness, I haven't seen that (with all the fresh food and flavors - it's not bland). I would like to eat there more, but sometimes our 30 min lunch breaks don't allow me to go over there.
If anyone wants to try here let me know, I'll come by if I"m working. :)
Yes, I think it is totally awesome that we have a vegan bistro in a hospital. I moved to PDX 2 years ago and I always wanted to work at Adventist because of the vegetarian food (as a veg' RN I was pretty much limited to bring my own lunch).
