Maple and Calvados glaze! That sounds SO clever. I bet it was delicious. I doubt any omni would think twice about digging into that.

the basic substitute was flax seeds for eggs -- it's a very yummy cake!

that's where the whole thing started -- we had made an apple cider/maple syrup/bourbon glaze for Thanksgiving in years past. Then we picked up a nice bottle of Calvados from France, and decided to up the apple ante ;)
