thanks y'all!

the whipped cream is mimiccreme, the kind from the aseptic container. i put it in the fridge overnight and put my mixing bowl and whip attachment in the freezer for about 10 minutes too, because it whips up higher the colder it is. it has the taste/texture of cool whip, minus all the weird chemicals

Do you mean the Healthy Top stuff?

Is the crust on the mini quiches phyllo dough? Everything looks so good!

yup, mimiccreme healthytop. i really liked it! it was my first time working with it

the mini quiches are in phyllo. i found out that a standard batch of my quiche filling, which is enough for a 9" round quiche, makes 80 phyllo minis!

the quiches are based on isa's recipe, but i add nutritional yeast and miso to mine

I used to call MimicCreme "MiMi-Creme". It took ages before I noticed the 'c' in there. Those little quiches are darling! (I used to pronounce this word 'quicks' until someone corrected me after laughing forever).

And french toast skewers are possibly the best idea ever.

It's the classic broccoli quiche from Vegan Brunch, with some modifications. http://www.theppk.com/2008/06/pot-luck- ... -a-quiche/

1 batch fills about 80 of the mini phyllo shells and they make great hors d'oeurves! I got my meat-and-potatoes dad to eat about half the batch I made. Also really good with some coconut bacon on top/inside

Wonderful, I do actually miss quiche sometimes and I've had wonderful vegan quiche made by other people and never quite mastered it myself :)
