I've heard people say look for a Japanese pickle press as a substitute. They've recently come up on amazon when I was searching, but they cost about as much as the tofu xpress. If you could find one in store, I bet it'd be a whole lot cheaper

Hold tight! I had one shipped to Canada just a couple of months ago, so it's probably just a temporary thing. You might want to email them and ask for details. Viva Granola sells them too (but are currently out of stock, and they were pricier than ordering directly from tofuxpress). I wanted to order from VG because I <3 them and wanted to support them, but $63 + shipping from Montreal for a piece of plastic was more than a bit ridiculous.

I say stay firm in your non-press stance! I use 2 plates and a pile of books, no towels at all. It may not be fancy tofu with the newfangled mechanical hoodigs, but by gum I get by alright.

Has anyone tried the light tension spring, the one you have to buy separately? The website says you can use it for yogurt cheese and stuff like that. I was thinking it might work well with some of the recipes from Artisan Vegan Cheese.
