I got a bag and I want to start experimenting. Any good recipes out there?

I too have a bag of Bob's teff flour and have been wanting to try it out... I thought these looked like a good experiment! Seasonal-ish too!

I added a bit in with Bob's all purpose flour and it worked out well in some muffins.

Injera!

i am lucky to have an artisinal gluten free bakery in town. i know! anyway, they make a seeded whole grain teff bread that is really good. it's very heavy, sorta like one of those heavy german breads. but it is awesome toasted with peanut butter on top.

I've seen a few mofo blogs try to make injera and fail. The recipes that work seem to have wheat in them. I guess I could do part teff/part other GF flour.

I have bought the Maskal brand teff flour before and their recipe for pancakes was really good! So fluffy and nice. Disclaimer: I used amazake as the liquid but have heard from others who make the fruit juice kind. Next up I'm going to try the scone recipe!

I highly HIGHLY recommend this recipe for Teff Ginger Molasses Cookies. I kind of died when I ate them. They're soft on the inside, great texture, with a firm exterior. Even the batter is amazing (which can't be said for all GF baked goods). Looks like it's similar to the recipe posted above, except mine turned out much less spiky...maybe that had something to do with the slightly altered ingredient amounts?
