Did anyone else not like the chickpea cutlets? :( Please don't hate me! But I had one and it made me feel really sick after, and now even thinking about them makes me feel sick! :(

Veggiepalooza, I have that issue when I make them and eat them all by myself in one go. They also tend to sit on my stomach longer than other food, they are really pure comfort food to stuff your sorrows into. Did you make a sauce to go with them? Could it be that? I know that after I stuff my face with the cutlets I have to give it about a month before I can have them again without gagging.

I think they were too oily. I cut way back on the oil (usually just use spray) or I bake them. I do like the flavors and the texture, but they do need gravy or sauce for sure (oil or no oil) I actually like them best when they have been frozen, then re-heated in the microwave! weird. im weird. I love them now though...kinda wanna make some this weekend. maybe ill make a huge batch and freeze them and use them in lunches for awhile.

I wasn't into them until I baked them and now I'm in love. It was mainly a texture thing for me, they were just to gummy when pan fried. When I bake them they get crispy and are hard to stop eating.

I like them fried or baked, plain or with sauce. And with different beans! I made them with black eyed peas once, and they were awesome.

I think if you make them too large and then use the frying method, it's easy for the gluten not to cook, which is what would make them gummy and raw-tasting. I prefer them baked (or "oven-fried", brushing on a fairly generous amount of oil to get both the crispy exterior and the more cooked interior), or fried but as mini-cutlets.
But hey, if you don't like the flavours, you just might not like them. Which is fine! :) I add more garlic to mine.

I made the BBQ Tofu, it took me a long time because for some reason I have the idea I don't like BBQ flavoured things. But OMG it was delicious and my omni sister LOVED it.

Man, this book is the gift that keeps on giving. I made jelly donut cupcakes for the first time last night, using apricot preserves; my only regret is not doubling the recipe, because they are AMAZING.

Mustard Sauce might just be my new favorite v'con recipe. My father in law said he loved it even though he's not a mustard fan (and Isa and Terry say it's for serious mustard lovers only, hmmmmm).

I made the leek and bean cassoulet with biscuits last night. Nom! It's supposed to serve 6 but my parents and husband hoovered it all up. I've never had American biscuits before - these ones are baked right on top of the stew so the bottom part is kind of wet like a dumpling and the top is nice and puffy like a scone. I added half a tablespoon of dried rosemary to the biscuit mix cause I just can't leave things alone. Yummy!

I made the spaghetti squash mexicali earlier this week despite my husband claiming to hate spaghetti squash (because I am mean) and I was SHOCKED that he absolutely loved it. Honestly, I expected so much whining.

Making the mousakka tonight! My family is Greek so there is lots of pressure haha. Plus I think if I had ten wishes in life one of them would be to make pine nuts cheaper.

I made the Marinated Italian Tofu on Friday and it was delicious! Using a grill pan really helps seal in the flavor of the marinade. I can't wait to make the recipe again!

^Agreed! Just planted some eggplant today, I have a feeling all of it will be going into future mousakkas haha.
What Vcon dessert should I bring to a omni grad party?

The chili pumpkin seed mole is awesome! I made that with the corn pudding and black beans. So good!
VP- It's hard to go wrong with a V'con dessert, but the coconut lemon bundt cake is delicious. The various fruit desserts are quite omni-friendly as well (the berry coconut crumble is both easy and yummy).

I've heard great things about that one! Very excited to try. I'll probably make that one and the quiche.
