Is everything closed on that day? I know that there is no chance to buy anything but are restaurants or museums open? And where is the best place to see (in Vienna) Corpus Christi traditions (although I don't think I could understand anything) or what is the best way to spend this day (walk in park etc.)?

I had to google when exactly that day was (June 7th, right?).
Stores will definitely be closed, but I am assuming

Yamm http://www.yamm.at/ is open on holidays from 10 am to 6 pm. It's on the pricey side (you pay per weight) but vegan options are clearly marked on the buffet.

I am assuming there will be some sort of big Catholic spectacle going down by St. Stephen's (Stephansdom) but Austria is a Catholic country, so most churches will have a procession.

For a walk in the park, I'd recommend Prater or Donau Insel. You can rent small boats to take out on part of the Danube too. Some info here: http://www.alte-donau.info/
I'd also recommend renting bikes and riding around the Insel or along the river. Lots of people will be out and about that day if the weather is nice!
You can also walk through the vineyards in Nussdorf or Stammersdorf and stop in some of the wine taverns along the way. You get great views of the city from Nussdorf and can take public transport to either place. Let me know if you want more details!
