A super delicious breakfast of leftover brown rice heated on the stove with almond milk, raisins, cinnamon and banana & maple syrup added after. Yay for instant rice pudding!

I've been making no-knead sandwich bread once a week, and it really makes things taste better. Plus: cheaper than buying bread.
Anyway, breakfasts have been a slice of toast with EB, two rounds panfried of gimme lean sausage, and a bunch of sauteed kale. Delicious! And if I eat it late enough it counts as lunch, too.

Husband has a dinner meeting tonight so I am eating alone. Which means: nachos for dinner! Tortilla chips, black beans, fresh bell pepper, tomato, onion, cilantro and a sprinkling of daiya left over from the bakesale and a squeeze of lime. Hello!!

I love me some homemade veggie burgers. The homemade part takes prep. Do this when you are not lazy. Then you can be lazy a lot.
Food processor garlic onions (already sauteed) mushrooms (already sauteed) corn quinoa almonds 1 can mixed beans sea salt 2 tblsp flaxseed soaked in water
Freeze in patties and fry up as needed. I like to eat them with sauteed mushrooms, red onion and lettuce on a vegan bun. Yum --
Also simple and delish
zuchinni mushrooms peppers red onion all fried up in coconut oil
(I choose to believe the hype about coconut oil being awesome for you... mostly because I want it to be true. If you don't buy it use the oil of your choice)
Mix in some quinoa cooked in veggie broth
Fry it all up together for a few minutes Yum ...
I also enjoy some air popped popcorn with olive oil or coconut oil, salt and pepper. Yeaaa. Not original but yum.

Since my boyfriend and I have not yet moved in together (soon!), we don't eat dinner together every night. On what we call our "solo nights", my favorite lazy meal is crispy tenders and baked spicy sweet potato fries (with garlic powder, paprika, chili powder, curry powder & cayenne), all dipped in BBQ sauce. I had this tonight actually, mmm.

Packet of ramen with the seasoning + a scoop of white miso + a big squirt of sriracha + a shake of dried basil and chives + frozen peas and corn. Cover with hot water and stir around. Instant salty comfort soup that is way better than just eating it as-is from the packet.

I'm not sure how. And I don't think I'll be able to move for a while.

I'm having a homemade chickpea quinoa burger on lettuce because I'm too lazy to get buns, a side of steamed broccoli, and frozen banana slices dipped in peanut butter/cacao powder melty sauce for dessert.

Have been wondering if it was you!Erm, it was sort of made-up as I went along, but I sliced two onions and fried them slowly for ages, put in some very thinly sliced carrot that needed using up, put the cubed tofu in until it was browned (I'm rubbish at cooking tofu, but I'm not picky about eating it), added very thinly sliced broccoli, and curry powder, paprika and powdered ginger, stirred it, added a tin of coconut milk and let it simmer while I finished cooking the pasta, til the broccoli was just almost tender. Ate it on spaghetti because I couldn't be bothered buying noodles. Added soy sauce to the pasta because I forgot to put salt in when I cooked it. It wasn't as good as I'd hoped; I think it needed different or more spices. And yes I was at the bakesale. It was a bit awkward- I had wanted to help, but there was only a small table and lots of helpers, and someone I used to know at school but I hadn't seen for years turned up right at the beginning (when I had put out my cupcakes but there wasn't space on the table for rum balls). So I went out for tea with him, then I came back and he didn't seem to want to leave me and I was feeling all shy and awkward so I just put the rumballs on paper plates in the staff area and left. And because I was carrying a jacket and a big tin and was worrying about knocking over soap I don't think I said goodbye. It was sad that I didn't get to chat with people properly (or meet PPKers!), but at least I know I can carry stuff to a bakesale without dropping it. I hope no-one thought I was being weird; they all seemed very nice.

Ive done it before... that shiitake is ridiculously moreish.

Ate quite a lot of cereal bars (and a punnet of strawberries mmmmmmm) yesterday afternoon, then accidentally fell asleep about 6pm. When I woke up at 10pm I wasn't in the mood for carbohydrates or proper cooking, so had a tin of chickpeas mixed with a chopped tomato and a little soy sauce and olive oil for dinner.
I am intrigued about the chocolate chip hummus!

Whhhhhaaaaaat? you guys haven't heard about dessert hummus' ?!
1 can of chickpeas drained and rinsed. 2 tablespoons of cashew butter (I just use 1 cause I eat the whole damn batch...) 1-2 Tablespoons of soya milk 1-2 teaspoons vanilla extract 2 Tablespoons of sweetener ( I use agave)
Whizz it all up in a food processor till smooth. Stir in a handful of chocolate chips.
Ta daaaaaaa
You can also do other variations, adding in cocoa powder.. making an oatmeal raisin type one, in which you just omit the chocolate chips and add in cinnamon and raisins instead.
The one I typed out is a recipe that is essentially from loads of blogs ive seen, except I tried to make it a smidge healthier. check out chocolate covered katies blog :)

i love buying these pre-made teriyaki sauces at the store. dump over rice. eat.
if i'm feeling fancy, i'll slice off some tofu and fry it up in my cast iron skillet, or cook some frozen edamame.

Currently eating a super weird but super delicious mish-mash of stuff in a bowl: pan-fried Gimme Lean beef topped with steamed peas, broccoli, and kale, a spoon of rice, THEN topped with freshly made Sanctuary dressing and a sprinklin' of nooch.
Luckily both my roommates are away so no one can judge me while I eat this in sweatpants while watching Mad Men.

Oh, finals week. You are doing wonders for my bachelorette meals! Dinner was steamed kale, broccoli, spinach, corn mixed with some pinto beans and slathered in nooch, tahini sauce, and hot sauce. Onward to work!
