I put pine mulch around several Hydrangea bushes and within hours one of them started to wilt. I think the leaves were turning yellow too. I've removed the mulch and it seems to be doing ok now, the leaves look less wilty. I'll check on it again tomorrow morning to see if it survived the night. But the other hydrangea bushes are fine with this new mulch surrounding them. I used bagged pine mulch from Lowe's. So what did I do wrong or what do the experts here think happened?

Diagnosing problems is tough. The best case would be if it was a reaction to heat/sun, but this may be unlikely if leaves are turning yellow too. Hydrangeas, especially when they've put on a lot of quick growth in the Spring, will wilt in the sun and then bounce back in the evening.
