Blogilates Vegan Meal Plan

Anyone doing this challenge? The meal plan looks pretty yummy. A lot of the recipes are slightly adapted from Appetite for Reduction.

After 5 years of veganism I am noticing I am eating fewer and fewer raw vegetables and fruits. I am hoping this will help me get back in the swing of eating more veggies and less fat. I always get more than enough protein, but wow, I eat so much fat. I think this is just the kick start I need.

Man, that is not a lot of calories. I am trying to get back into eating more fruits and veggies, but I need way more calories than that, or I'll waste away!

I know no one asked, but something I find really helpful when I find myself getting lazy and not getting my fruits and veggies is to add a green smoothie and either a salad or a soup with as many veggies as I can get into it (I like the lentil veggie soup from AFR and also the rainbow black bean soup from Fat Free Vegan kitchen, though I add additional olive oil to both) to my food for the day. That alone usually gets me 4 or 5 servings of fruits/veggies, and it always makes me feel great.

I think this is a great idea. I don't like some things about the meal plan (I can't figure out what I'm supposed to do with the other half of Wednesday's grapefruit or all the extra servings from the 6-8 serving dishes)... but it has inspired me to do better meal planning next week and make sure I up my fruits and veggies. I used to meal plan and I ate way better when I didn't have to think about what to eat.
