Can I just say that VeganMoFo is the coolest idea since (vegan) chocolate chip cookies? (Had to change it from the boring "sliced bread.")

I'm having my second contest. The challenge is to choose a new-to-you cuisine (or a specific method within that cuisine) and try your hand at it. For example, I'm making gnocchi from scratch.
